In today's bakery course led by dear teachers @yenny47 and @katherine012, I learned about making semi-sweet bread with a delicious filling. This is one of my favorite bread recipes. First of all, if you don't mix salt before kneading the dough, you are doing it wrong.


It is known from the elders in our family that it is not good to mix salt directly into the yeast as it destroys the yeast. But now we know. Salt can strengthen the gluten. And it makes the dough less stretchy. The proteins in gluten usually repel each other, salt helps hold them together. This creates a tough dough. This is a good thing for a baker because when the yeast creates gas, the salt makes the dough strong enough to stretch without breaking. It allows the dough to absorb more water and stretch without tearing.

Today I will make Delicious bread with chicken filling. The process of making the first bread dough.


🧾Ingredients required to make the bread dough.

1. 500 grams all-purpose flour, 2. One tablespoon salt, 3. 1 tablespoon yeast, 4.125 ml warm water, 5. 50 grams butter, 6. 50 grams sugar, 7.One egg, 8.1 tablespoon vegetable oil.


Now let's see the method of making the dough.
  • First, I will mix the yeast, sugar and 10 grams of flour with water well and cover the bowl and leave it to rest for 15-20 minutes.

  • Now I will beat an egg with the flour and add half of it. Mix it well with the flour with the whole butter.

  • Now I will mix the flour mixture with the yeast mixture. Mix it very well. To prepare a good dough, it needs to be kneaded for about 10 minutes. To make perfect bread, the yeast needs to be kneaded well.

  • Once the dough is made, I will leave it to rest in the bowl. I will spread a little oil on top so that the top of the dough does not dry. I will put a lid on it and keep it for an hour.

Now, I will prepare the chicken filling.


🧾Ingredients needed to prepare the filling.

11. 450 g chicken, 2. 1 tablespoon of vegetable oil, 3. 1 onion, chopped, 4.1 few green chilies, 5. chopped, 6. 1 tablespoon of salt, 7. 1 tomato, chopped, 8. 1 tablespoon of white pepper, 9. 2 tablespoons of chicken masala, And 10. chicken stock (salted).


Preparation method.
  • First, I will cut the boiled meat into small pieces. Now, when the pan is hot, I will fry the onion and green chilies in a sufficient amount of oil until lightly brown. Then I will add the chopped tomatoes. After a while, I will add the meat with salt, white pepper and chicken masala.

  • I will cook the meat with the spices for a while. Now I will cook it well with chicken stock. You will have to add pepper or salt according to taste. When the water dries up, remove it from the oven.

Now the chicken bun preparation method.

  • After an hour, the yeast has risen and filled the bowl. Now, I have pressed the air out of the yeast and divided it into four parts.

  • Now I have made a loaf and filled it with chicken filling. You just have to design the loaf according to your choice.

  • I have made four different designs. Now I will cover it with a cloth and keep it for 30 minutes.

  • After 30 minutes, the loaves have risen and doubled. Now it is ready to bake.

Beaten egg, White sesame, One spoon of liquid milk.


  • Mix half of the beaten egg with one spoon of milk and brush it on the bread.

  • Now I sprinkle white sesame seeds on top. This will make the loaves look more beautiful.

  • The loaves are ready to be taken out. Now bake at 180°F for 30 to 35 minutes.

In our country, all types of roti are popular, salty, sweet or spicy. But it is a personal choice according to taste. As my husband and I like spicy and salty bread. And my kids like sweet roti. But it is a great snack with tea or coffee in our country.
