How To Prepare Turn Brown Pap Using Guinea Corn , Millets And Yellow Maize
Hello dear steemians how are you all doing? Well, here am feeling good to be here
Today i made a very nutritious meal for the family called turn brown Pap.It is a Nigerian fermented cereal made from guinea corn, Millets and yellow maize. And in some areas in Nigeria it's called Akamu, Ogi etc.
I bought ten cups each of guinea corn, Millets and yellow maize from the market, carefully select it removing all dirt and shaft away.
Next i turned all three cereals together into a clean bucket filled with water and washed thoroughly.
Soaking Of The Creals( The Fermentation process)
After washing the cereals cleaned, i took another clean water and soaked the cereals into a clean bucket filled with water, covered it and then allowed to ferment for three days.
Why? ferment it you might asked.
Importance Of Fermentation
It is important to note that allowing the pap to ferment is healthy for our body. This is true because fermented foods are rich probiotic bacteria.
What Is A Probiotic Bacteria
These are combination of lived beneficial bacteria and or yeasts that naturally live in our body. And we have two types of bacteria that lives in our body - The bad and good bacteria.
Probiotics are made up of good and bad bacteria that helps keep our body healthy and functions properly.
This good bacteria helps in fighting off bad bacteria when it is too much in our body. Thus it maintains a healthy balance in our body, keeping our body neutral, support our immune function, controlling inflammation and creating vitamins in the body.
Therefore, consuming fermented foods, you are adding beneficial bacteria and enzymes to your overall intestinal floral, increasing the health of your gut microbiome, digestive system and enchance the immune system.
On the third day of fermentation, i filtered out the fermented water, washed the Creals with clean water and grind it smooth with big grinding machine.
Next i took sterile or clean transparent sieve, tie it to a clean wide basin and added water to almost the brim of the basin and then using a bowl scooped out the grounded cereals, pour into the sieve and start sieving continually untill it was all completely sieved.

Then the waste from the turn brown was used for poultry feed.
So you see nothing is a waste in agricultural produce

However, i carefully and gently removed the sieve and allowed the residue or washed pap to settled down for like ten minutes so as to carefully get the pap. After the end of ten minutes, i gently poured out the upper clear portion of the water out of the basin and got my pap settled beneath.
Finally, i poured the pap into a sterile or clean pap or Akamu bag, tied it firmly and placed a clean heavy load on it so that the remaining water inside will completely drain out leaving the pap to be dry.
After this i untie the pap bag and bring out all the pap and put it into a clean bucket with cover and refrigerated it.Yes! yes! My turn brown pap is ready.

The Importance Of Turn Brown(guinea corn, millets and yellow maize) Pap
(1). The importance of turn Brown Pap can never be over emphasized this is because, it is very beneficial to all ages.
For example here is my grandmother eating the turn brown pap i made specially for her with a Nigerian delicious jollof brown beans.

This pap is good for her reason being that she is hypertensive and the turn brown pap is an excellent source of potassium and contains zero amount of sodium, making it a perfect food for her since she is hypertensive. And the pap will help maintain her high blood pressure.
Because of consistent high blood pressure and age factor her medical doctor warned that the salt in her meal should be reduced. Thus pap being a potassium- rich food will help lessen the effects of sodium in her body while also reducing or easing tension in her blood vessel walls and this will shield her against myriads of health conditions that could have come up in the future.
(2). Apart from the aged, pap is also good for pregnant women. The deficiency of folic acid could result in the birth of underweight infants or might even cause or trigger neural tube defects in newly born babies. And so pap is an excellent food for expectant mother since it is rich in folic acid.
Most importantly, it promotes breast milk production after child birth and gives great strength to the breast feeding mother.
(3). In Nigeria turn brown pap is a popular weaning meal introduced to babies and toddlers because it is easy to digest, very nutritional to the growing child,provides some proteins vitamins and minerals that are very critical for baby's growth and overall development.
(4). Nevertheless, pap is very good for lactating mothers because it contains a high amount of water and some other components that promote easy, adequate flow of breast milk for lactating mothers.
(5). It is a friend to the digestive system this is true because its digest food easily, because of the high content of water in it, as such, letting the body to get rid of unwanted elements and substances simply by increasing the rate at which you urinate and reduces constipation.
(6). It revives or gives strength to convalescence individuals who are recovering from illness.
(7). It is a good source of carbohydrate so it is an energy giving food.
(8). It promotes mental alertness or sharpness and accelerate the mentabolism of fat for energy.
(9). It improves kidney's health.
(10). Finally, it is highly economical and easy to prepare.
