Rendang Ayam ~ A Malaysian Traditional Dish
Hello Ladies, @eventhorizon and @steemwomensclub! How are you beautiful ladies? I hope everyone is having an awesome time with your family and loved ones. It was so interesting to read about the current contest organised by @eventhorizon and sponsored by @cryptokraze, awesome!
For this contest, I will be cooking Rendang Ayam or Chicken Rendang which is very traditional. This dish is a signature dish for Malay festive celebration and is traditionally served during Hari Raya Aidil Fitri (Eid al-Fitr) and Hari Raya Aidil Adha (Eid al-Adha). Rendang is a rich meat dish (beef/chicken) that has been slow cooked and braised in a coconut milk seasoned with a herb and spice mixture until the gravy thickens and the meat turns tender, becoming caramelized and infused with rich flavors. The gravy is very fragrant because it uses fresh spices, turmeric leaves and kaffir lime leaves that adds to the special taste of this rendang.
Ingredients
1 chicken
1 tablespoon chilli paste
3 tablespoons Rendang spice powder
1 bowl coconut milk
1/2 cup tamarind water
1 tablespoon coconut kerisik
2 pieces of turmeric leaves
4 pieces of kaffir lime leaves
salt and sugar to taste
Blend Ingredients
4 onions
8 cloves of garlic
2 inches halia
1 inch galangal
4 lemongrass
Methods
Heat oil in a pan. Stir the blended ingredients until oil rise to the surface.
Add the sauteed spices, 2 cinnamon sticks, 3 star anise and 5 cardamoms. Mix well and let it cook for 5 minutes.
Add Chilli paste and mix well. Cook until oil rise to surface.
Add chicken and mix well. Let it cook for 5 minutes.
Add rendang spices and mix well. Let it cook for 5 minutes.
Add coconut milk and tamarind juice and mix well. Let it cook for 5 minutes..
Add coconut kerisik, season with salt and sugar to taste. Let it cook for 30 minutes or until the gravy has thicken.
Cut the turmeric leaves with scissors. Garnish with turmeric leaves and kaffir lime leaves.
This is Kaffir Lime Leaves that is very important to add the fragrant to this dish.
Rendang is best to be eaten with Lemang and it is ready so I need to find the lemang to eat with it. I went out to buy some lemang nearby my house. Lemang is a Malay traditional food made from glutinous rice, coconut milk and salt, it is cooked in a hollowed bamboo tube coated with banana leaves in order to prevent the rice from sticking to the bamboo. Lemang is traditionally eaten with Rendang during Malay Festive Celebrations, the Eid-ul-Fitr and Eid-ul-Adha.

Gosh!!!! There's a lot of ingredients that I am hearing for the first time. But it's pretty interesting the use of coconut milk in the recipe.
