They're not strictly red but here in our country they are called red eggs. No one questions why they're called that when they're not really red. Just like hot dogs, I guess 😉

The eggs are placed in brine solution for a certain number of days or weeks. This is what they call curing. The eggs get cooked in the curing process, just like hard boiled eggs, but much saltier because of the brine solution. I suppose there is a scale but I do not know it.

You and @xiao-aine refer to Eastern. Is this like the Christians' Easter Sunday? We do have a tradition to hold an Easter egg hunt on Easter Sunday. We boil the eggs and paint them with different bright colors and designs and call them Easter eggs. Then we hide them for the kids to hunt.
