THE BEST FOOD POST - WEEK 48 - SPICY MANGO CURRY
Hello Everyone,
This is the first time I'm writing for a culinary contest organized for the Italian community. I went through the previous weeks of this contest and thought that participating in this contest is a great platform for me to share my art of cooking.
My country, Sri Lanka is well known for its mesmerizing art of gastronomy. We Sri Lankans have extra ordinary cuisines with authentic way of cooking. Today I have brought you a famous dish in Sri Lanka, SPICY MANGO CURRY . And the specialty is I'm going to present it to you with our traditional style of cooking although it is unpopular in the present.
First let's see what are the ingredients that we want;
Raw Mangoes | Coconut Milk | Chili Powder |
Sugar | Turmeric | Curry powder |
Roasted curry powder | Onions | Salt |
Green Chili | Garlic | Rampe |
Curry leaves | Cinnamon | Cardamom |
Fenugreek | Pepper | Cloves |
Now let's see how to make this mouth watering SPICY MANGO CURRY
First you have to cut the mangoes. This is the hardest part because it's really tough to cut the mangoes in to pieces while the seed remains inside. Once you have cut it into the pieces wash them well.
Next keep a clay pot on the hearth. As I said today I'm using our traditional way of cooking. Instead of cooking this in gas cooker I use the hearth. And even cooking in a clay pot is also is a secret behind our delicious food.
Once the pot is heated I add some oil and let it heat up for 1min. Then I add all the spices, curry powders, chilli powder, turmeric, garlic, onion, green chillies, curry leaves and rampe in to the pot. Then stir it well till the onions turns little golden brown.
After that add the man go pieces and half cup of water in to the pot and mix them well. Now close the pot and let the mangoes cook well for 3mins.
Then add the coconut milk and mix it well and leave it to cook for 5mins.
Now the delicious SPICY MANGO CURRY is ready !!!!!

I know that cooking at hearth is kind of difficult because we have to always keep on blowing to maintain the flames and when the smoke fill around it is irritating to the eyes. However the taste of these dishes is unbelievable.
