This curry is one our family's favorite dishes, and also one of the only ways we can get the @KidSisters to eat okra. 🍛
Okra just doesn't get the respect it deserves, and most people that don't like it have had the unfortunate experience of eating a slimy mess.
🍅 Tomato Curry & Fried Okra 👨🍳 An Ital Recipe 🍛
Okra was used in the most recent recipe I posted on Hive, and here it is again. "Why?" Well, okra is cheap and healthy, and honestly, that's reason enough for us in these tough times.
🍅 Ingredients 🧅
Tomato Curry⋆ red onions - 1 or 2⋆ bay leaf - 1 ⋆ tomatoes - 10 (3 cups puréed) ⋆ ginger - thumb-sized piece ⋆ green chilies - 2 or 3 ⋆ cumin seeds - 1 tsp ⋆ coriander powder - 2 tsp ⋆ turmeric powder - ½ tsp ⋆ chili powder - ¾ tsp ⋆ sea salt - 1 tsp ⋆ cane/palm sugar 2 tsp | Fried Okra⋆ okra - 350 to 400 g⋆ besan - ½ cup ⋆ sea salt - 1 tsp ⋆ cumin seeds - 1 tsp ⋆ amchoor (mango powder) - 1 tsp ⋆ coriander powder - 1 tbsp ⋆ chili powder - ¾ tsp |

As I make this post, I realize the knob of ginger and palm sugar were left in the kitchen during the above photo. You need them even if they aren't in the photo, just so you know.

Congratulations!! You just made tomato curry and fried okra. Pat yourself on the back, brag to your cat, goldfish, or loved one, and build a pyramid of fried okra on top of your tomato curry to enjoy with some brown rice.
As I already mentioned, this curry is one of the few ways the @KidSisters will eat okra, so I try to make it a few times every month.
As you can see, Monkey-B is the most stoked family member to enjoy this dish.
