Who does not love mangoes and any food made from mangoes?


Mango is a seasonal fruit that is more or less preferred by most of the people. This fruit is my favorite and favorite fruit. Among other fruits, it is number one on my favorite list. I tried making desi mango jhuri pickle this year during the mango season. I have never made pickles like this before. Because I didn't have time to do all this. I was busy with studies and work.

Anyway! I will try to present the recipe for the “Mango Jhuri Pickle” I made, In-Shah-Allah!

“Mango Jhuri Pickle”.


I have tried to make the whole mango jhuri pickle in my way. Maybe the recipes of food or pickles are more or less the same for everyone. However, I will try to mention my recipe. By having our mango tree, we get the taste of native mangoes, by the grace of God, Alhamdulillah!

This recipe seems to me to be the best-tasting recipe.

The native mangoes on our tree fell in the storm.


Raw Mango Sour Sweet Basket Pickle.

Ingredients:

  1. Mango
  2. Salt to taste
  3. Sugar
  4. Turmeric powder
  5. Dry chili
  6. Garlic
  7. Mustard oil
  8. Mustard batter
  9. Panchfodan Powder
  10. Coriander powder
  11. Cumin powder
  12. Chili powder

For the mango basket pickle, first I cut the raw mangoes into small pieces. Many mangoes fell from our mango tree due to the heavy storm. So I took the local mangoes from our tree to make pickles. After that, the mango slices should be rubbed with salt and after some time put in a thin cotton cloth and drain the water well.


Add mustard paste, chili powder, and other ingredients.


Then add mustard paste, turmeric powder, and chili powder to the cut mango, add a small amount of sugar, and gently knead it with the cut mango. There are many who give onion slices, but I don't. I don't like it. So, I don’t add onion.

Preparation for sun drying.


Then I lay paper on a steel tray to dry the mangoes and gently spread the mangoes on it. The mangoes should be dried in the sun in such a way that the mangoes are not too mushy, and the mangoes should not be too wet. It will be slightly soft but will dry. Dry the mango so that there is no water inside.

I could not take a picture of the mangoes after drying. After drying, my mother keeps my work fast, so she fills the glass jar with her hands and keeps it ready so that I can finish the next process.

Then take the same amount of mustard oil as the mango. Then I have to add pachaphodan masala, 3-4 dry chilies, and 1 garlic in oil. Then this oil should be heated in the oven on a light flame or many people put it directly in the sun. After heating in the oven, the oil must be cooled. Then pour the mango into the glass jar, oil as much as the mango. Then I put it in the sun for another 3-4 days.
