Hey there, fellow foodie! Today, I want to share with you my favorite Bengali snack recipe - Crispy Beguni. if you're a fan of crispy and spicy snacks, then you're in for a treat! I'm here to share my favorite recipe for Bengali crispy beguni. It's a mouth-watering dish that's perfect for any occasion, whether it's a lazy afternoon snack or a party appetizer. So, let's dive into the recipe!

  • 1 large eggplant
  • 1 cup chickpea flour (also known as besan)
  • 1/4 cup rice flour
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1/2 tsp cumin powder
  • Salt to taste
  • Water as needed
  • Oil for deep frying
  • 1 eggs

Directions:

  • Begin by washing the eggplant and cutting it into thin slices. You can either keep the skin on or peel it off, depending on your preference.

  • In a mixing bowl, combine the chickpea flour, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well and add water gradually to make a smooth batter. The batter should be thick enough to coat the eggplant slices well.

  • Heat oil in a frying pan or kadhai on medium-high heat.

  • Dip the eggplant slices in the batter, one at a time, and coat them well.

  • Carefully drop the coated eggplant slices into the hot oil and fry until golden brown and crispy. Flip them over once to ensure even frying on both sides.

  • Once the eggplant slices are fried, use a slotted spoon to remove them from the oil and place them on a paper towel to absorb any excess oil.

Your crispy beguni is ready to be served! You can enjoy it as is or with your favorite dipping sauce. Tamarind or mint chutney would be a great accompaniment.
