"Recipe of the Day, Week No. 48: (Bhapa Kadam Puli Pitha Recipe)"

Today I will share the recipe for Bhapa Kadam Puli Pitha in the Recipe of the Day contest. The Steemit Iron Chef Community @dasudi mam organized Week No. 48. This pitha will be as attractive to look at as it is delicious to eat. Now is winter and pitha is very well known as a winter delicacy. It is especially respected in Bengali society as a delicious food. In addition, the festival of organizing pitha-puli plays a special role in making the bond between relatives and people stronger and stronger. There is a traditional dessert in every nation that symbolizes its cuisine and culture. In Bangladesh's situation, it is pitha. Pitha is not only a food, but also a storehouse of memories.
Ingredients required for making Kadam Phul Pitha:
Rice powder 1 cup
Date molasses 1 cup
Coconut shell 1 cup
Basmati rice Half cup
Orange food color
Step 1:
First, I took half a cup of basmati rice in a mixing bowl. It would be better to use basmati rice to make Kadam Phul Pitha. I washed the basmati rice thoroughly by changing the water two or three times. Then I soaked it in clean water for 20 minutes. After 20 minutes, I drained the rice in a sieve and poured it. I will use this rice for coding the pitha.
Step 2:
Now, I put a pot on the stove to make the pitha filling. I added a cup of coconut shell and date molasses, cutting the date molasses into small pieces. I kept the stove on medium heat and stirred it continuously.
Step 3:
After mixing for a while, the jaggery will melt and release water. You have to wait until it dries by stirring continuously. When the water dries up, I added some crushed cashew nuts to enhance the taste of the pitha filling. Then stir it well for some time and mix it with the pitha filling. Now the pitha filling is ready to make my steamed Kadam Puli Pitha.Let it cool after taking it from the stove.
Step 4:
To make Kadam Phul Pitha, I will make a pitha dough with rice powder. For this, I put one cup of water in a pot on the stove and add one teaspoon of salt to the water. When the water boils, I add one cup of rice powder. Then I will mix the rice powder with the water very well. When the pitha dough cools down a bit, stir it with your hands to make a beautiful pitha dough.
Step 5:
If you stir it well for some time, a smooth and soft pita dough will be made. Once the pita dough is ready, cut small pieces into balls for the pitha. Cut all the pieces of dough into balls in the same way.
Step 6:
Take the pitha ball and roll it around in your hand. Then, take a spoonful of filling and close the pitha from all sides. Close the pitha well so that the pitha does not open while steaming. Make all the pitha in the same way.
Step 7:
Now, roll the prepared pitha balls in the drained and kept-apart basmati rice so that no part of the pitha ball is left out. Then, the pitha will look more beautiful after steaming. After rolling all the pitha, place them in a steamer.
Step 8:
I will boil more water in a pot on the stove. When the water boils, I will place the pitha steamer over the pot of boiling water. I have left the pitha a little empty because the rice will swell and spread around in the steam, and the pitha will also swell. After adding all the pithas, I will close the lid of the pot. The pitha will be steamed for twenty minutes.
Step 9:
After ten minutes, I will remove the lid of the pitha and see that the rice has swollen and spread around like a flower. To make the pithas look more beautiful, I put a little orange food color in the middle of the pithas.
Step 10:
I closed the lid of the pot for another ten minutes. After 10 minutes, I opened the lid of the pot. The rice has swollen and spread around and the pithas look beautiful like a flower. I served the pithas in a pot. The pithas were as attractive to look at as they were delicious to eat.
