Typical sunday meals | Delicious and Healthy Dinner at Home
The weekend was great and there is no better time to reunite with loved ones and share delicious food. This week I decided to make something really special that is not only delicious but also good for us - a shrimp dish and a refreshing fall salad. Let's dive into this culinary adventure together :)
Here are the ingredients needed:
For the salad:
4-5 large tomatoes, chopped
2-3 cucumbers, peeled and cut into cubes
1 cup cherry tomatoes, halved (optional)
200-300g. cheese, crumbled or cubed
1 large onion, thinly sliced
1/2 cup olives, pitted
1/4 cup olive oil
2 tablespoons of fresh lemon juice
1 teaspoon of honey
Salt and pepper, to taste
Fresh herbs such as basil or oregano, chopped (optional)
For the shrimp:
a few large prawns
2 tablespoons of olive oil
2 cloves of garlic, minced
1 teaspoon ground cumin
1/2 teaspoon red pepper
Salt and pepper, parsley to taste
Lemon, quartered (for serving)
Start by making the salad. In a large salad bowl, combine the chopped tomatoes, cucumbers, and onion. Stir well so that all ingredients are evenly mixed. Add the crumbled cheese to the vegetables and mix gently so that the cheese does not crumble. In a small dressing bowl, whisk together the olive oil, lemon juice, honey, salt, pepper, and fresh herbs (if using). Whisk well until you have a smooth dressing. Pour the dressing over the vegetables and cheese and toss gently to make sure everything is coated. Cover the bowl with lettuce and refrigerate while you prepare the shrimp.
Heat a large skillet over medium-high heat. Add 2 tablespoons of olive oil and fry the shrimp for about 2-3 minutes on each side or until pink and crispy. While the shrimp are cooking, combine the garlic, cumin, red and black pepper, and salt in a small bowl. Stir to combine. Once the shrimp are done, remove them from the pan and place them on a plate. Sprinkle them with the aromatic spice mixture and let rest for a few minutes before serving.
