Recipe of the Day, Week No: 51: (Fish Sauce with Plantain)

Steem greetings to all the amazing chefs in the community, and welcome to my blog as I share another native recipe with lots of native spices that give it a mouth-watering taste and flavour.

That said, my recipe for the day is fish sauce with plantain. This is among the delicacies in Cameroon and is mostly prepared by the coastal people of Cameroon. I prepared this meal for lunch, and it contains lots of nutrients needed for our body's growth.

Ingredients Used
  • Njansa
  • Rondelles
  • Onion
  • Fresh Bar fish
  • Seasoning cube
  • Salt
  • White pepper
  • Garlic
  • Plantain
  • Vegetable oil
Steps to Prepare the Meal

I removed my fish and put it in a bowl of water, while it was defrozed, I scraped off the scales. It is good to scrape the scales before the fish defrosted to avoid it being damaged.

After scraping the scales of the fish, I washed it with clean water and salt. Then I used my chopping board to cut off the fins, removed the intestines and the gills and cut the fish into desirable slices. You could still cook the fish without slicing it. I put the sliced fish into a colander and seasoned it with a seasoning cube and a bit of salt to taste.

I took my ingredients, which comprised of njansa, white pepper, rondelles, onion and garlic, to blend. This will give me a smooth paste that is highly needed for the sauce.

I placed my pot on the cooker at normal heat and poured in a bit of vegetable oil. I cut in my onions to fry a bit to get a better flavour. After frying the onion, I poured the blended mixed spices into the pot.

I allowed it to boil for about 5 minutes, and I went ahead to add the seasoned fish. I added some seasoning cubes and a bit of salt into the sauce to taste. I stir a bit to get a good blend.

I allowed the pot to boil at normal heat for about 20 minutes and the spices to seam well into the fish. I added a bit of vegetable oil and avoided over stiring so that the fish would not scatter. Switched off the cooker, and the fish sauce is ready.

I had to take my plantains washed them with clean water before peeling off the peeling. It is preferable to use unripe plantain, but my kids do not like unripe plantain, and I had to cook half-ripe plantain.

I used a knife to peel the plantains, cut them into halves, washed them again with clean water and put them in a pot. Pour enough water into the plantain to boil at normal heat. Allow it to boil for about 15 minutes, and the plantain is ready to be served.

I had to serve myself a plate and enjoyed it. Everyone enjoyed the meal, and my 1 year old enjoyed the fish sauce to the extent that he fished three pieces of the fish and still wanted more 😆😄. The Rondelles is an appetiser, so in case your kids are not eating well, use Rondelles to cook as it is a native spice that gives appetite.

This is my favorite food, I don't joke with plantains no matter how it's been cooked. I love this fish as well. If you were close would have paid a little visit. Hahaha.

Great recipe, I can feel the taste of traditional Cameroonian food just by writing. Especially the combination of spices and the cooking steps are explained quite nicely. This combination of plantain and fish looks really interesting. 🙂
