What is your favorite food to enjoy in winter, and why?
My favorite food to enjoy in winter is gajar ka halwa (carrot pudding). There are many dishes that I like, but in winter, we can enjoy food more because the cold weather allows us to relish warm and hearty meals. I mostly prefer warm foods in winter that not only taste good but also provide warmth and help us fight the cold.
Especially in very cold weather, warm food feels more enjoyable for me, and ya prevents us from getting sick, as cold weather often leads to sore throats and similar issues.
The food I enjoy the most during winter, and even love preparing, is gajar ka halwa. It is made from grated carrots, milk, sugar, and dry fruits and it requires a lot of effort and time to make.
This dish is very popular in our area, and people often prepare it in large quantities during the winter. Once made, we store it at home and eat it daily as much as we like.
What makes it even more special is the addition of nuts like almonds and pistachios, which not only enhance the flavor but also make it very healthy. I find it especially enjoyable to have gajar ka halwa in the evening with tea.
This dish is not only tasty but also provides warmth and energy, making it perfect for the winter season. Our winter meals feel incomplete without gajar ka halwa, and it’s a dish that everyone in my family loves.
Is there a specific recipe or ingredient that makes it unique for you?
Yes, gajar ka halwa becomes unique and special for me because of the specific ingredients we add to it. We include a variety of dry fruits like cashews, almonds, pistachios, and whatever else we can find to make it rich and flavorful. These dry fruits not only make it tastier but also add a nice crunch and make it healthie.
We use khoya (reduced milk from market), which enhances the flavor and gives the halwa a creamy and smooth texture. Cardamom and ghee are also added to boost the aroma and make it even more delicious.
The milk and khoya combined with the dry fruits make it a perfect winter dessert that keeps us warm and healthy so these ingredients makes gajar ka halwa truly special for me.

Making gajar ka halwa is simple but requires some time and effort. Here's how we prepare it at home:
First, we thoroughly clean and wash the carrots. Then, we peel off their skin and cut them into two pieces to remove the hard core in the middle. After that, we chop the carrots into small pieces. These pieces are then boiled in a large pot of water until the water almost dries up.
Next, we add a generous amount of milk to the pot and let it cook with the carrots. To enhance the flavor, we also add khoya (reduced milk) and continue stirring it constantly to prevent it from sticking to the bottom of the pot. We cook this mixture until the milk and khoya are completely absorbed.
In the meantime, we prepare the dry fruits like cashews, almonds, pistachios, and dates. These are lightly roasted separately to bring out their flavors. Once roasted, we gradually mix them into the halwa and cook it for a little longer to combine everything well.
Finally, our gajar ka halwa is ready to enjoy. We usually make a large batch so we can store it for several days, share it with relatives, and enjoy it during winter. It’s a delightful and hearty dish that brings joy to everyone.

If I were to share gajar ka halwa with my Steemian friends, I would definitely do it with joy. As I mentioned earlier, whenever we make gajar ka halwa at home, we prepare it in large quantities so that we can share it with our relatives and loved ones. It’s a tradition in our family to send this delicious halwa to others, so they can also enjoy its rich taste.
