To make this dessert we needed the following ingredients:
1 cup (200 g) unsalted butter, softened
2 cups (400 g) of sugar
3 large eggs
1 tablespoon of vanilla essence
3 cups (375 g) all-purpose flour
1/2 cup (60 g) natural unsweetened cocoa powder
2 teaspoons of baking powder
1 teaspoon of salt
1 cup (240 ml) whole milk
1 cup (240 ml) hot water
Here are the steps you need to follow. First, start by gathering all your ingredients and equipment. This includes two mixing bowls, one mixing bowl, a hand mixer or electric mixer, a spatula, a cake pan about 9 inches (23 cm) in diameter, parchment paper (optional), and a kitchen scale. In the large mixing bowl, add the softened butter and sugar. Using a hand mixer or an electric mixer, beat the butter and sugar together until light and fluffy, which should take approximately 3-5 minutes. Add the eggs one at a time to the butter and sugar mixture, mixing well after each addition. Once all the eggs are incorporated, add the vanilla extract and continue beating until the ingredients are fully combined.
In a separate bowl, mix together the all-purpose flour, cocoa powder, baking powder and salt. Mix them thoroughly to make sure all the ingredients are evenly distributed. Gradually add the dry ingredients to the wet, alternating with the milk and hot water. Start and finish with the dry ingredients. Mix gently, being careful not to overmix the batter. Now it's time to prepare the cake pan. Cover the bottom with baking paper to prevent the cake from sticking. If you want to have a round hole in the center of your cake, place a coffee mug or metal bowl of the appropriate size on the parchment paper-lined bottom of the cake pan.
Pour the cake batter into the cake pan, making sure to spread it evenly. If you're using a coffee mug or metal bowl as a template, gently press the dough around it to make sure it flattens out properly. Before putting the cake in the oven, preheat it to 180°C. Once the oven is hot, place the cake tin inside and bake for 35-40 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, remove it from the oven and let it cool completely on a wire rack. As the cake cools, it will shrink slightly, which will help keep its shape with a hole in the middle. Once the cupcake has cooled, carefully remove the coffee mug or metal bowl from the center and release the cupcake from the cake pan. Enjoy your delicious cupcake :)
