Hi amazing Chefs! I am so happy to participate in this contest created by @jyoti-thelight. I really love this contest. Food is a basic need of man. No individual would be comfortable without eating.

For today, I ate four different dishes. Let's begin.

Breakfast

I had Granola Cereal and fried Akara ( bean cake)
for breakfast. I enjoy having cereal for breakfast. Granola cereal contains oats which is a good source of fiber. It also contains vitamins and proteins which provide the necessary energy for me to start my day.

Akara is a local snack in Nigeria. It is made from beans. Beans is ground into powdered form and mixed with pepper, onion and salt. The batter is fried and Akara is made. It is a typical breakfast for most homes in Nigeria. I love eating it as breakfast. Its main nutrient is protein.

MID-DAY SNACK

I did a lot of cleaning at home. I tidied up my room, I dusted the furniture and mopped the entire house. I was so hungry and worn out. I needed a refuel. I settled with two cupcakes and a glass of chilled Zobo drink. Zobo is a local drink made from dried hibiscus flower. It is highly nutritional.

Zobo drink relaxes the blood vessels and helps to improve blood flow. It aids digestion and prevents constipation. It is very good for the nerves. It is also good for relaxation especially on a tiresome day like this.

LUNCH

Later in the afternoon, I prepared boiled rice and stew. I decided to make something solid that would be filling. Rice and stew is a delicacy enjoyed by children in my locality. It is usually cooked during festive seasons. When I was younger, rice and stew was my favourite food. I am still in love with it up till this day.

EVENING SNACK (DINNER)

Since I ate a quite heavy meal in the afternoon, I decided to round the day off with a light snack. A good friend of mine gifted me with Edita Iwa ( Cassava snack) which means eatable cassava (a native snack). I had it for dinner.

Boiled cassava cannot be eaten immediately. It has to be soaked in water for about two days before it can be eaten. It is a very long process to slice cassava into small pieces like this. I am beyond grateful for this gift.

Edita iwah is my most favorite snack of all time i do eat them with akara (beans cake), groundnut and sometimes i make sauce to enjoy it.
