Hello friends. In this contest organised by
@jyoti-thelight. I decided to prepare an appetizing African meal, pounded yam and white soup also called “ofe nsala” or “afia efere” by the Ibibos. It is really delicious and often eaten during occasions like traditional marriages, family gatherings, festivals or just eaten at home for the pleasure of all.
Ingredients for the meal
Raw yams (depending on the quantity to be prepared and number of people)
Few pieces of goat meat
Few pieces of stockfish(cleaned well)
Ponmo(optional)
Smoked fish (if you are able to source)
Grounded crayfish
Seasoning cube (I used Knorr cubes)
Salt to taste
1teaspoon of pepper soup spice
Fresh or dried pepper
Uyayak (aidan fruit.. it tastes good though I don't like using it)
You can use yam powder or cocoyam as thickener for the soup.
Preparation of Pounded Yam
First, I sliced the yam into round sizes, then i peeled and washed the sliced yams.
Then I divided it into four pieces per slice and set it on the fire to boil for about 25 minutes.
After that, I use a pestle and mortar to pound the yam(you can use a food processor too but mine is bad so I opted for this without delay)
Preparation of white soup
1 Wash, season and steam goat meat and stockfish with pepper, salt. Add pieces of yam and cook , take out when cooked and pound for the thickener.
2, Wash fish and add to pot with the spices and crayfish when goatmeat is almost cooked. Check the seasoning and pepper at this point.
3, Add more water to the the pot , bring to boil and add the pounded yam and cook till the soup thickens to the desired consistency. If you are using yam flour , dissolve in cold water into a paste and stir quickly into the soup water . Stir well to prevent the paste forming a big lump in the pot. Then leave to boil until the soup thickens.
4, Lastly add the sliced Uziza leaves . Cook for 2-3 minutes and soup is ready.
5, Serve with pounded yam
