There's Veggie Burgers that are good and then there's some that are just downright awful!

Fridays are takeout nights as we're all pooped by the end of the week as this is our marathon day with changing over from business guests to weekend leisure guests in our BnB Lily's Cottage.

Veganuary sees many non-vegans moving to plant based foods; a great idea after the over indulgences of Christmas and New Year festivities.
It is a known fact that many chronic diseases like coronary heart disease and diabetes improve once on a plant based diet, yet many of us only heed that advice once we have a serious health scare! It also prevents cancer, heart disease, and hypertension and helps with weight control.
So much kinder to the planet and to animal life as well, but coming from a country where a meal is not a meal without meat on the plate, this is really difficult especially for the menfolk who like their Braais (BBQ)!

Hubby has been enjoying many of the vegan dishes I've been preparing for FAVM, so perhaps introducing a plant-based diet slowly is the way to go?

Looking at a very popular takeout's menu online, I ordered what sounded and looked like a great veggie burger; however biting into something totally tasteless was such a let-down!

So I started planning a re-run for Saturday night and this time our experience was great - Luscious Lentil Veg Burger with a homemade Magical Aquafaba Mayo - absolutely delicious!

Luscious Lentil Veg Burger

  • 1 cup black Lentils - cook & drain
  • 1 Carrot - diced
  • 1 small Onion - diced
  • Spring Onions / Baby Leeks - chopped
  • Parsley & Fennel - chopped
  • 3/4 cup rolled Oats
  • 1 Tbsp Soy Sauce
  • Salt & Pepper to taste

Sautee Carrots, Onions & Leeks/Spring Onions in a little oil for 5 min
Add herbs & sautee another minute or so
Add all ingredients to food processor and pulse till well blended and mixture comes together
Form into patties while still warm
Shallow fry in a little oil to brown both sides

First time I ever made my own Vegan Mayo so when I was asking Granny Google for advice, I was really sceptical, but I was so wrong!

Magical Aquafaba Mayo

  • 1/4 cup Aquafaba (Chickpeas brine)
  • 1 tsp Apple Cider Vinegar
  • 1 tsp Lemon Juice
  • 1/2 tsp Mustard powder
  • 1/4 tsp Salt
  • Sugar replacement (Stevia) equivalent to 1 Tbsp sugar
  • 1 cup Canola or Sunflower oil
    Place all except oil in small blender & blend till frothy.
    Slowly add oil till it becomes thick and creamy- adjust seasoning to taste

When I was planning this burger early in the morning, I realised I had no gherkins - something which is a must-have addition to any burger; I was not in the mood to run out to the stores so I went foraging in the refrigerator - I had a bottle of really good Chili Pickled Onions and a lovely Cucumber so added some thinly sliced Cucumber to the pickles and by dinner time the cucumbers were nicely pickled and perfect to use on our burgers!

  • Floury Portuguese Breadrolls
  • Crispy Lettuce
  • Lentil Pattie
  • Fried Onions
  • Aquafaba Mayo
  • Instant pickled Cucumbers
  • Chili Pickled Onions

Burgers are one of those things that I get cravings for, especially with gherkins and beetroot (you did a good job getting those vinegary tastes in there!) and that mayo looks great. I'd love to try this one, though hubby can't have chickpeas (IBS) so that's the reason I haven't made something with aquafaba already. It look sooo good! I'd love you to use the #naturalmedicine tag for your great vegan posts, as then they'd appear on www.naturalmedicine.io - we'd be so proud!

Will definitely use your tag in future for vegan posts, thank you for the lovely comments! Gosh that's a pity, it really worked like magic, so even the brine affects him? IBS is no fun! I have a reflux problem and found Siberian Pine Nut Oil to be very helpful, apparently it's good for IBS as well. May be worthwhile trying it?

I sure would like to know more about this pine nut oil. Where do you get it? Does it help with abdominal pain? Do you cook with it?

I buy it online from a natural health products site, you take approx 2 tsp twice a day in the beginning, then once daily. I only took it to prevent acid reflux but it's said to help with IBS.

This looks amazing my friend :) I've tried several vegan burger recipes but haven't found one that doesn't fall apart, this burger looks wonderful. The mayo luscious! I'll be trying this one for sure. Love it!

I was also concerned about it falling apart but it held together perfectly. I think it's the heat from the sauteed veg helping the oats with binding it.

Now THAT is a veggie burger! From the patty to all the fixings, and especially that magical mayo. Oh, did I mention the bun looks to die for, too? Yum! Sign me up for a plate for dinner!
