Today , I’m excited to share a very simple but thrilling sweet snack or treat that can be made with minimal ingredients , which you may already have in your kitchen. This recipe is for Semolina Cake or suji pitha , made from suji or semolina , a traditional snack that can be ideal for a healthy school tiffin or a welcoming treat for guests. It’s a quick and easy way to bring a smile to your loved ones’ faces , especially in the evening when everyone needs a little snack.

How to Make Semolina Cake (Suji Pitha):
Step 1 :
Take a mixing bowl and crack two medium size eggs into it. Whisk the mixture for quite some time until it becomes frothy and smooth. This step is important to make your pitha lighter and airy.
Step 2:
Once the eggs are nicely beaten, gradually add the sugar to the bowl. Keep beating until the sugar is well dissolved into the egg mixture, ensuring your pitha will have an even sweetness.
Step 3:
Now, add the ghee and a pinch of salt to the mixture. The ghee will give the pitha a rich taste and a mild aroma, while the salt will enhance the flavor.
Step 4:
Gradually add the semolina (suji) to the egg mixture. Keep stirring continuously so the semolina mixes uniformly without lumps. At this point , you might also want to add a teaspoon of milk powder. This is optional, but milk powder usually enhances the taste and gives your pitha a creamier texture.
Step 5:
Let the mixture rest for about 5 to 8 minutes. This allows the semolina to absorb the moisture , achieving the right consistency needed for frying .
Step 6:
Heat a pan over medium flame. Pour in enough oil to deep-fry the cake or pitha. It’s important to keep the oil warm but not too hot , as hot oil can cause the semolina to brown too quickly.
Step 7:
After the batter has rested, take portions of the mixture and shape them into small biscuit-like discs. Gently place them into the warm oil. Fry the pitha on medium heat to prevent the oil from getting too hot. Fry until both sides are golden brown, turning them occasionally to ensure even cooking.
Step 8:
Once the pitha is golden brown and crispy on the outside and softer inside , take off them from the oil and place them on a paper towel to drain any excess oil. Now your semolina cake or suji pitha is now ready to be enjoyed!
This semolina cake is a delicious , highly adaptable treat for any occasion. Serve the home made semonila cake or suji pitha warm or cold with a cup of tea or coffee in evening or pack it as a sweet surprise in your child’s tiffin box or store it later for midnight craving.
