Here's what I used to make it: |

First I washed five kg of tomatoes well and cut them by removing the tomato core. I cut each tomato into four pieces as shown in the picture.

Then I cut one piece of ginger and two garlic cloves. Then I added two/three pieces of cardamom, two/three pieces of long, three or four dried chilies and half a cup of water to the chopped tomatoes and let them boil in the oven.

Then I boiled the tomatoes on medium heat. While boiling, I stirred the tomatoes every now and then. Then when the tomatoes were completely cooked and melted, I left the tomatoes to cool for about 2-3 hours.

Then when the tomatoes were completely cooled, I ground them in a blender. First I tried to strain those tomatoes through a sieve so that the seeds and tomato juice were separated. But then the tomato juice and seeds were not separating. So I then strained the tomato paste through a sieve and then discarded the seeds that had come up in the sieve.

Then I mixed it with a teaspoon of cornflour and five teaspoons of vinegar for 5 kg of tomatoes. In another bowl, I washed about half a cup of tamarind and mixed it with hot water so that it mixed well.

Then I put the strained tomatoes in a light oven to mash them again. Then I added salt to taste and then about a cup of sugar. Then I added the previously mixed vinegar and cornflour mix to the tomato puree. Then after a while, I added the tamarind water to the tomato puree but I took the seeds.

The most important thing at this stage is to mash the tomato puree on low heat. I stirred the tomato puree with a spatula until it turned into a sauce. When the tomato water was completely dry, I turned off the stove. To check if the tomato puree had turned into a sauce, I poured a little bit into a bowl and tilted it for a while. I kept the tomato sauce on the stove until the water separated from the tomato sauce. When the tomato sauce slowly went down and the water did not separate, I was sure that the tomato sauce was completely done.

Then I left the tomato sauce to cool. When it was completely cold, I poured it into two jars for storage. I poured it into a tomato sauce container like the one I had.
