We are in our Senior Years already and our health is our priority. Since January we do not eat rice anymore only viands and as much as possible low carb food plus practicing intermittent fasting. First me and hubby started with 12 hours fast for 3 days then moved to 14 hours next 16 hours then 18 hours without food intake just water and black coffee. But, when we are travelling we cheated sometimes with what we eat. We can eat pizza...
and hubby sometimes drink beer. That's what spike his blood sugar the following day.
In my case why I practice intermittent fasting and decided to eat low carb foods because of my rheumatoid arthritis. The doctor said, I must avoid sugar at all cost plus I have skin problem in my feet since 2020. I already tried many medicines and herbal meds but still the same. The wounds were there and very etchy especially at night, I can't sleep, I always scratch them.
When I started fasting, whoa! the wounds little by little healed, not etchy anymore. That's why last July 16, I fasted for 24 hours. I was happy, it was successful, I never felt hungry, I made it. I belonged to an Intermittent Fasting Group in FB. A doctor is guiding us how and always reminding us the benefits of fasting as much as possible 16 hours daily for our body to reach autophagy. Then, I lose weight. I was 70 kilos before now I am 62 kilos plus my" bilbil" or tummy not so big anymore. My goal now is to achieve the 55 kilos mark.
That's the difference of my before and now.
On this post am gonna share what I cook this afternoon timing on a rainy Friday but that rain was since last night. Now, that we are just at
home I cook a low carb Puto Cheese for our snacks but me for my last meal about 5 pm paired with Robusta coffee I ordered from @sarimanok.
Grateful my the coconut flour I ordered from Shoppee arrived , the main ingredient for low carb cooking. I viewed YouTube how to cook it the account of La Kusina Kusinera. I just doubled her recipe plus I adjusted the sweetness by reducing the number of equal gold added
Here is the ingredients:
1cup coconut flour
2 tsp baking powder
6 sticks of equal gold
4 tbsp butter
8 eggs
1 cup all purpose cream
1tsp vanilla
Place coconut flour, baking powder, equal gold in the mixing bowl, mixed thoroughly then make a well in the center. Place the egg, the all purpose cream. Mixed well with spatula then egg beater. Place the vanilla, mixed well.
Place the batter one by one on the little plate molder. With cheese on top.
Placed in a steamer and steam for 5 minutes.
Dyarran! The low Carb Puto Cheese is ready to be devoure.
I right away sent pictures to our family GC in messenger my youngest daughter noticed the big cheese on top. Hahaha! That's for personal consumption so better place big cheese for a tastier low carb puto cheese.
