Hello everyone, I hope you are safe and doing good in this pandemic.
I heard about this contest and was willing to participate.
So here is my entry for this competition.

One of my favorites street food is GOL GAPPE. I can have this in any season, any time and in any mood.

GOL GAPPE

As most of the Indians like Gol Gappe, also called by so many names like Paani-Puri, Puchka and many other names in different parts of the country.

It has a combination of all, when you don't know what you want to have, this is the perfect thing to have at that time. Gol Gappa is filed with sweet or sour or both sweet and sour water which enhances your taste and mood and the most liked crispness and can also have dried with the combination of tamarind chutney, dahi and spices. It is also a fun to have it because most of the teenagers bet on who's finish all the gol gappe faster and who have it more. Even after having it you will not feel full. A perfect thing to have with your family and friends. The best thing about Gol Gappe is that it is easily available and do not cost more. Sometime after having food we do not feel good, but after having Gol Gappa you will never complaint, due to its ingredients. Each and every ingredient have benefits of consuming it.

But sadly in this covid pandemic many are avoiding food from outside, for those I am sharing recipe of my favorite Gol Gappe.

GOL GAPPE

INGREDIENTS REQUIRED

▪︎ Suji/ Semolina
▪︎ Refined Oil/ Ghee

HOW TO PREPARE

STEP 1 : Take suji in a bowl and add little oil/ghee in it.

STEP 2 : Now mix them well.

STEP 3 : Now add water and prepare a dough. Knead it alteast for 10 minutes.

STEP 4 : Take small dough and prepare small puri by flattening it by using rolling pin.

STEP 5 : Now take a pan, add oil/ghee in it and then turn the flame on.

STEP 6 : Firsty heat the oil on full flame, when the oil get hot, turn the flame at medium. And after 1 minutes add prepared puri.

STEP 7 : Now fry on low flame them till they turn golden brown and fluffed up.

Now we will prepare sweet and sour water for the gol gappe.

INGREDIENTS REQUIRED

▪︎Mint leaves
▪︎ Corriander
▪︎ Green chillies
▪︎ Tamarind/Imli
▪︎ Boondi (optional)
▪︎ Salt
▪︎ Roasted cumin powder
▪︎ Black salt
▪︎ Hing/!Asafoetida
▪︎ Sugar/Jaggery

HOW TO PREPARE

STEP 1 : Now take mint leaves, coriander and green chillies and make a fine paste.

STEP 2 : Take tamarind soak it in water, remove all the seeds and then strain it.

STEP 3 : Now cook tamarind water till it get little thick.

STEP 4 : Now take water in a bowl, add salt, black salt, hing/Asafoetida, roasted cumin powder, sugar/Jaggery, cooked tamarind water and paste prepared by using coriander, mint leaves and chillies.

Here our sweet and sour water is ready.

Now we require something to fill in. For this you require just a boiled potato or you can use boiled chickpea/chole with boiled potatoes. Add salt, chilly powder, roasted cumin powder, lemon juice, chopped onion in it and mix well.
