Hello amazing chefs of this community! I’m Oluwatimileyin, and I welcome you once again on this page. Thanks to @shiftitamanna for organizing this contest. Today, I present to you a dish called "Native Jollof Rice."

Native jollof rice is mostly prepared in west African countries, including Nigeria. Every region and household has its own method for preparing this meal.

✅ What is the name of the dish that you have made this week? And why did you choose this dish?


The name of the dish here is called Native Jollof Rice. I chose this food because it’s one of my favourites and because it contains natural and local ingredients that are beneficial to our health. It doesn’t contain artificial ingredients except the seasoning (Maggie). Many years ago, we substituted Maggie for locust beans. So it’s your choice to use Maggie or not. To those who don’t like spices in their food, especially those in their old age, with my full chest I recommend this to your daily meal and trust me, you will love it.

Ingredients used

  • Rice
  • Palm oil
  • Smoked round fish (Eja kika, in Yoruba land)
  • Cow skin
  • Crayfish
  • Piper guineense leaf (Uzuza, in Igbo land)
  • Scent leaf
  • Onions
  • Pepper: cayenne pepper (shombo), scotch bonnet (rodo), bell pepper (tatashe)
  • Locust bean (Iru, in Yoruba land)

Preparation

  • Wash your rice with salt, perboil, and set aside.

  • Wash your pepper with water, grate it and set it aside.

  • Remove the bones and dirt from your smoked fish and rinse with water, set aside.

  • Remove the dirt from the cow skin and rinse with water, set aside.

  • Dice your onions and set them aside.

  • Eliminate stones in the locust beans, rinse with water and set aside.

  • Remove the stick from your scent leaf and piper guineense, slice and set aside.


Step one:

Put your pot on fire,set your pot, pour a reasonable amount of palm oil into the pot, and allow it to bleach. Then pour in your fish and allow it to fry a bit. Pour in the locust bean and onion. Lastly, pour the pepper. Add your seasoning (salt and Maggie) and crayfish. Allow it to fry.


Step two:

Add a reasonable amount of water, depending on how soft your rice is, and allow it to steam. Then go ahead to pour your rice, and lastly, mix your scent leaf and piper guineense( Uzuza leaf) mix with a turning stick to prevent it from burning. Let it cook for 10minute or until the water is dried.
