Hi, beautiful ladies, I trust your week is going well; mine is simply amazing! One of the things most of us especially we women love doing is cooking. You know I always thank the Almighty God for the knowledge of the art of cooking because it allows us to blend flavors, cultures, and nutrition into delightful meals. Today, I will take you to the vibrant world of Eggplant, but before that, tell me how you eat yours?
I used mine to make a sauce and it was my first time, and the dish turned out to be not only nutritious but super delicious. I ate it with boiled yam. Alright, let me tell you this: today's recipe is not only a feast for our senses, but it also comes with wonderful health benefits you would not want to miss. So what are we waiting for, let's get into cooking!
To make a savory eggplant sauce you'll need the following ingredients:
- Eggplant.
- Fresh tomatoes
- Carrots, green beans, and green pepper.
- Fresh fish, oysters, and onions.
- Fresh pepper, (to taste) scent leaves, and vegetable oil (for frying.)
Cut your fresh fish, wash it, wash your oysters, season them with salt, Maggie, onions, pepper, and curry spices, cook, and keep aside. | |

Wash, peel, and cook your eggplant for five minutes. Then blend it to your desired consistency. | |
Wash all your vegetables and chop them (tomatoes, carrots, green beans, green pepper, and onions). Set them aside. | |
Put your frypan on fire, and heat your vegetable oil over medium heat. Add your chopped onions and then fresh tomatoes allow them to cook for 5 Minutes | |
Then add other vegetables except your mashed egg plant, mix thoroughly, and cook for 5 minutes. | |
Then add your mashed eggplant and cook for a few minutes before you thoroughly mix everything. | |
Add fish and oysters, and add seasoning cubes, fresh pepper, salt, and natural mixed spices. Turn everything well. | |
Finally, add your shredded scent leaf for a delightful aroma and taste. Let it simmer for a few minutes and your delicious eggplant sauce is ready! |
You can serve your delightful eggplant sauce hot over boiled yam, as I do, Boiled potatoes or plantains for a wholesome meal.
Another name for eggplant is Aubergine; it is rich in vitamins, minerals, and antioxidants. I learned that it contains Vit C, potassium, and dietary fiber, and it's low in calories. All this supports our heart's health, helps in digestion, and aids in weight management. The presence of antioxidants in the garden eggs helps to reduce the risk of chronic diseases.
The boiled yam combo makes this dish a balanced meal. Yam is a good source of carbohydrates, it gives energy and helps in absorbing nutrients.
