Vegetables is a good source of vitamin to the human system. Some part of the world eat the leaves raw while others prepare it as soup, bringing in other ingredients to suit their taste. However, there is a great variation in preparation with respect to tribes and tradition. Today, I will be sharing with you the cooking method of we here in Akwa Ibom and Cross Rivers State and some other south-south states in Nigeria.

Bitterleaf soup is a type of soup prepared with bitterleaf as the main vegetable. Water leaf or melon can be used to compliment it. As the name implies, this can be extremely bitter if nothing is done about it although there are people that truly love it very bittered. I will narrow this write up down to compliment it with water leaf.

Food ingredients for preparing bitter leaf soup

The following ingredients can be used to to have a very delicious bitterleaf soup but firstly, let me itemized some food ingredients that can aid us do this.

  • Bitterleaf
  • Waterleaf
  • Fish (dried and fresh fish)
  • Meat
  • Fresh pepper
  • Maggi
  • Periwinkle
  • Stockfish
  • Salt
  • Crayfish
  • Palm oil

One may asked, all these ingredients? Yes and even more. A sumptuous meal is determine by the quality of food ingredients used and the method of preparation anywhere.

A lot of people can't not withstand the Bitter ness of bitter leaf. The bitterness can be reduce to a certain level to make your soup through constant washing of the lead to removed the pigment. Since, it has the potency of regulating the blood cholesterol level in the human body, it therefore become pertinent that one takes it. Follow my cooking steps to have a delicious meal then.

  • Get already washed bitter leaf that is bitter friendly, wash water leaf and slice.( The leaf can as well be pounded and gradually washed with water to have this)
  • Thoroughly wash and steam fresh fish and meat, adding salt, onion, pepper, maggi in a little quantify to have it taste well.
  • Pour the steamed meat/fish into the cooking pot.
  • Add a little portion of water considering the quantity of food items. Add washed dried fish, pounded pepper and cray fish with stockfish along side dried fish.
  • Set the pot on fire and let it boil. Add up your well washed periwinkle.
  • Add some portion of oil and later add your well sliced water leaf and stirred to have them blend.
  • Let it steamed for a while, then add your salt and maggi and have it taste well. More oil can be added according to the individual quantity demanded.
  • Finally, add the prepared bitter leaf to it and stir gently to have it mix well.
  • It's ready to be served with prepared garri, fofo or semovita.

Wow! Very simple right? Yeah, but before it gets here, your neighbours must have been standing at an attention from every corner, peeping through windows and doors to see where the aroma is emanating from. Their nostrils must have testify that the food is yummy.

You might not really understand how sumptuous a soup is until you have a taste from a good chef like me that has refused running an eatery. However, I will love you to try preparing your own soup following my method to have the different taste from this method introduced to you. Thanks.

Wow, this is the typical Ákwá Ibom bitterleaf soup. I remember the first time I prepared this, though I added egusi to it, it turned out very nice and delicious.
