Business Activity | @baristaacademy | We were invited to the final kitchen evaluation of a gastronomic school recognized in our city.
On this occasion, Barista Academy moves to the Asochefs Cooking School. We tell you that we were invited to participate as a jury in the final test of the students of the school. It was a great pleasure for us to be able to participate, try exquisite dishes and give our rating and recommendations to the new professional chefs of that school.
We know that now you will ask yourself the question of how it is that being experts in coffee we are participating in professional cooking activities and it is very important to note that, in addition to having studies in coffee and Barismo, Daniel Lozada (Director of Barista Academy) @daniellozada, is also baker and pastry chef, in addition to other trades such as Chocolatier, that is, we have been training in certain Gastronomic Schools of the city and participated in some events and gastronomic activities in conjunction with other brands and recognized personalities.
For this final test, each school student had to prepare two dishes, it could be a starter and a main dish or a main dish and a dessert, this would be their presentation and final exam to obtain their professional chef certification. These dishes had Moroccan cuisine as their main theme, which should highlight in these dishes, many condiments and many spices, among which cumin, cinnamon, some spicy saffron, olive oils, among others. Also meats such as lamb, chicken etc.
Morocco is a country that is in North Africa, which has a certain influence from the north of the Mediterranean gastronomy, especially the Spanish gastronomy, and due to its southern borders, the influence of the Arab gastronomy. It is said that women are the main cooks in Moroccan kitchens and that they usually show off their culinary gifts at each special event such as weddings, birthdays, among others. It is also said that they tend to serve very large portions and that in most cases these meals are served at noon.
The chef and teacher of these boys was Samuel Delgado, who is very well known in our city, on Instagram @chefdescabellado and who made us the invitation to participate as a jury (he is the one who appears with @daniellozada in the photograph), a total privilege, evaluating the various flavors, aromas, textures and evaluating everything that has to do with the preparations of each dish, as well as the plating they used to show their creation, all this would help with the evaluation of these guys that will allow them to obtain their final certificate that accredited them as professional chefs.
As I have already been between stoves and between kitchens having studied professional bakery and pastry as well as professional chocolatier, I already know the nerves that feel before a test and well at a certain point I entered the school kitchen, while the boys were fixing the dishes They organized everything before the presentation, maybe they see a bit of disorder but that is what is experienced in the kitchens before these evaluations and before any special event where elaborate dishes have to be served to the diners. It is the pressure of having to prepare something that must be exquisite, perfect, well decorated and presented, with a delivery time, all this makes even the most experienced chef nervous.
On a rainy afternoon in our city we were evaluating approximately 20 dishes, between starters and main dishes, in addition to that we tried desserts because there were students who did not make an entrance but made a dessert, others walked through some drinks, such as an infusion green tea with mint, very sweet according to the Moroccan taste, which was fabulous and from which we learned that Moroccans consume it a lot in special events and in various preparations.
Although it is very difficult to mention the dishes by their name in the Moroccan dialect, which I am not fluent in, if I can show you the photos and these images will speak for themselves, there we can see how well plated they were and how rich these foods looked, I can say that just as you look in the photo, these dishes were exquisite.
