Just vegetarian is not enough to avoid violence. Sometimes vegetarians become proud like this. My old body does well with beans and rice. I dehydrate leafy greens and sprinkle them as flakes. Seem easier to digest that way. Sometimes I powder them in the spice mill. My diet isn't for everyone. It's just what works for me. I fast three days/week on watermelon. May seem extreme to some. But it's just what works for me. Nuts and dried fruit for snacks. Sage in the forest food... lol
Fruit is hard to find these days. Strange, how times have changed. There was a period I lived on fruits only, hard to believe these days.
Also a time I only drank juice anf tea and once in a while a boiled egg and I felt great.
Now I intend to live on the air + sun (sun is hard). Let's see how far I get. 😁
How you dry those leaves?
I believe how we ate in the old days wasn't bad at all (cooked, nothing raw except saukerkraut).
I can even remember a time the lettuce was cooked.
If it grows here it gets dehydrated. lol. Today I cut some of the straggling sweet potato vines. The leaves are very nice, like spinach. But I dehydrate them and then crush into flakes. If I had to cook for others most likely I wouldn't be able to do what I do... I have one of these. A Cosori... Best purchase I ever made. It runs non stop. Lucky you, it grows. I can't say it's a fact here. I read the link and some other info about drying food. Perhaps it's a solution for us as well. I wonder how dried orange tastes and banana (fruit in general) like the fruit chips or?
I read there might be a vitamin C loss. I go figure it out.
If you cook for others they should eat what you eat. If they don't like it they can eat at home. LOL

Dried fruits become more sweet. Crunchy. Nice. The drying temperature is very low but there is some loss of Vit C. I set the temp for 135F... It's not like it's cooked... Just the water evaporated out. The dehydrated foods can keep for years without spoiling. No refrigeration or freezing needed. Great for snacking... Apples are some of the best... bananas are great...
I go have a look. It sounds interesting especially the long saving time. It might add something extra to our (winter) diet and who knows a nice treat for the pets too.
