Hi everyone am so glad to participate in this contest. I want to share my White Soup cooking contest. White soup (Afia efere) is one of the delicacies of Akwaibom people of Nigeria. It is called white soup because oil is not added in it. It is thickened with yam.

Recipe
Yam
Goat meat
Stockfish
Fish
Periwinkle
Seasoning cubes
Pepper, salt and crayfish
Uziza leaf

Process
Peel the yam, cut into pieces and boil. The quantity of yam used depends on the quantity of the soup

Wash the goat meat season and steam.

Prepare other ingredients, like the periwinkle, cut the uziza leaf, pound crayfish and keep.

When the yam is soft, pound it while still hot.

Set out the yam that will be used to thicken the soup. The pounded yam is supposed to be used to eat the soup, but due to the fact that yam is expensive I added fufu to pound the one that wil be used as swallow.

It's now time to cook the soup.
Add the needed amount of water to the steamed meat, add stockfish, fish, periwinkle, salt pepper, seasoning cubes and allow to boil. Add crayfish when it boils, then allow to boil for few more minutes. Add the pounded yam, cut it with your hand bit by bit and add to the soup.

Allow to boil for about 5 minutes. Stir the soup and check for thickness. If not thick add more of the pounded yam til desired thickness, then allow to boil. Taste, if satisfactory, add the uziza leaf, allow to boil for 1 or 2 minutes. Bring down the pot. Your white soup is ready.
