Assalamualaikum. Hello dear steemitian friends how are ? I am fine too. After a long time I am sharing a recipe post about pickles of Bilimbi fruits. Pickling bilimbi fruits can be a delicious way to preserve their unique flavor. Here's a simple recipe you can try this:

"Step 1: Gather Your Ingredients"

Bilimbi fruits(enough to fill your pickling jars)
Vinegar(white vinegar or apple cider vinegar work well)

Salt🧂According to taste
Garlic200gm
cloves10gm

Bay leaf05 pieces
Mastered oil200 ml

"Step 2: Prepare the Bilimbi Fruits"

Should be wash the bilimbi fruits thoroughly under normal running water.
Slice the bilimbi fruits thinly using a sharp knife. Remove any seeds if desired, although they are small and usually edible.

"Step 3: Making the Pickling Liquid:"

Keep the white vinegar,
sugar, salt, mustard seeds & oil, bay leaf, garlic paste cloves, and chilli flakes (if using) in a saucepan and stir to combine.
Stir well and add the salt and sugar once they have dissolved completely.

"Step 4: Cook the Pickling Liquid and Bilimbi"

Bring the pickling liquid mixture to a boil over medium heat.
Once boiling, add the sliced bilimbi fruits to the pot.
Simmer for 5 to 7 minutes, or until the bilimbi slices are crisp yet just a little bit soft. Stir occasionally to ensure even pickling.

"Step 5: Cool and Jar the Pickles"

Remove the pot from the heat and let the pickling liquid and bilimbi mixture cool to room temperature.
Once cooled, carefully transfer the pickled bilimbi fruits along with the pickling liquid into clean, sterilized glass jars.
Make sure the bilimbi slices are fully submerged in the pickling liquid.

"Step 6: Store the Pickles"

Seal the jars tightly with lids.
To enable the flavours to properly develop and merge, let the pickles sit in the refrigerator for at least a week before eating.

"Step 7: Enjoy Your Pickled Bilimbi"

Once the pickles have had time to mature, they're ready to enjoy!
Serve the pickled bilimbi slices as a tangy and flavorful condiment alongside your favorite dishes, or incorporate them into salads, sandwiches, or appetizers.
