Reuben Soup for St. Patrick's Day - Lori's Cookbook
On St. Patrick's Day, I told you I was making two things for supper. Here's the main dish I made for the day:
Reuben Soup
In my large crockpot, I placed:
- 1 tablespoon dried, minced onion
- 1 tablespoon driec, minced garlic (feel free to use more!)
- 1 small bunch celery chopped
- 8-12 tablespoons butter
Turn the crockpot on to high and stir as the butter melts and cooks the vegetables. (I wasn't so refined and just moved on...)
Add to the crock pot
- 1 package of corned beef (turned out to be about 4 pounds), chopped
- (any spices/liquid included with the corned beef)
- 4 cups sauerkraut
- 1 to 1.5 tablespoons sea salt
- 1 to 1.5 tablespoons caraway seeds
- 1/2 to 1 tablespoon ground black pepper
Fill the crockpot with beef stock.
Cover and cook on high about 4.5 hours.
Add and stir:
- 1-2 quarts heavy cream (I used crème fraiche and water)
- 6-8 cups shredded swiss cheese
Cover and cook another hour.
Serve with Irish Soda Bread (recipe coming)
Will serve a large (and hungry) Irish family! (Or plenty of leftovers to put in the freezer or can.)
Critique
Oh wow. I had my doubts because sauerkraut is such a strong flavor to add to the strong flavor of the corned beef, but I believe they met each other's match in this hearty, slightly sour, but great soup! Note that I used homemade sauerkraut that I'd made about four days before, so it didn't get too strong, but still.
I could taste the sauerkraut without trouble, but it simply worked! Definitely a winner - even though the kids didn't like it... they don't like any soup... oh well... one day.
