Preparing African Recipe: Edikakong Soup 🍛

Hello family. Greetings from the South-Southern part of Nigeria. Hope you all having a peaceful day?

Today i bring to you a recipe from Nigeria, known as Edikakong soup. This meal is commonly eaten in the South-Southern part of Nigeria and i'm also delighted to say that it's my favourite soup.

So, the preparation, here it goes

INGREDIENTS

¶ 1 kilogram of goat meat, or any meat of your choice

¶ Water leaf {Ceylon spinach}(already sliced)

¶ Pumpkin leaves

¶ Egg fish

¶ Smoked catfish

¶ Stockfish

¶ 3 bulbs of Onion, some cubes of seasoning

¶ Okazi leaves (grinded already)

¶ 75cl of palm oil

¶ Periwinkles

¶ Dried prawns (grinded)

¶ Grinded cameroun pepper

PROCEDURES

Step 1: Spicing and steaming meat

Washing meat thoroughly with salt, at least three times

Spicing meat with onions, seasoning cubes, pepper and salt to taste

Stir, Place on heat, without water and allow to steam until nearly soft

Meat at nearly soft stage

Adding water to boiled meat

Washing and adding stockfish

Stir and allow to boil

Preparing dried catfish and eggfish

When our stock gets to this point, its ready to take other ingredients

Adding grinded crayfish

Wash periwinkles until very neat

Adding palm oil and stir

Allow to boil for about 10minutes

Adding water leaf

Allow to boil for just 5minutes, then add the grinded okazi leaves

Our delicious Edikakong soup is ready. Can be eaten with swallow or rice
