Chicken - Ginger Soup (Tinolang manok)

Chicken Tinola is one of the most famous soups in the Philippines. A favorite to many, with its delicious broth, it's invigorating.

Without much further ado, this is our version of the chicken gingered soup, away from home. In this dish, Ginger is unpeeled, celery and pandan leaf are bashed to extract more flavor.

Ingredients

Chicken, medium cut
Onion, diced
Garlic, minced
Ginger, bashed
Fish sauce, 3 - 4 tbsp
Rice water or water, 12 cups
Green papaya, quartered
Potato, quartered
Cabbage,
Green beans
Moringa leaves
Bay leaves
Peppercorns
Pandan leaf, optional
Celery, optional

Preparations

  • Saute garlic, ginger and onion until fragrant.

  • Add in the chicken pieces and Saute until lightly brown.

  • Next, Add the fish sauce. Stir gently and let it sit for a few minutes.

  • Place the water into the pot, Bring to boil for a few minutes. Add the herbs, Lid on and simmer for 30 - 40 minutes.

  • Add the vegetables and cook until tender.

  • Adjust your seasoning and serve warm.
