My simple way of cooking ***Bicol Express***

Happy Saturday steemit friends! Lucky to get verified by @alikoc07 to join this community and I'm so thankful to be part of this community and for today I want to share my simple way of cooking BICOL EXPRESS one of my favorite dish. I like the spicy taste of it and the mouth watering juicy flavor of the coconut milk.

Let's start with the ingredients what I have here is...
(1) 1/2 kilo of pork ( Bicol express cuy)
(2) 2 tbls. of shrimp paste (hipon)
(3) 1 coconut (for gata)
(4) 3 pcs. of finger chili (siling spada)
(5) 7 pcs. of chinese chili (siling labuyo)
(6) 1pc of onion
(7) 4 cloves of garlic
(8) 3 strings of sitaw
(9) salt
(10) magic sarap (seasoning)
(11) cooking oil

For the preparation:

  • Sliced onions
    *Peeled and sliced garlic
  • (.)1 cup coconut water (gata from coconut fruit with1 glass of water)
  • (.) coconut milk (first juice or gata from coconut fruit )
  • (.) Cut the Chinese chili
  • (.) Cut finger chili
  • (.) Slice sitaw 1 inch

Let's start cooking my way:
Step (1) bring pot in a medium heat. Put 3 tablespoon of cooking oil
then add onion and garlic stir it till softened.

Step (2) add pork stir constantly till it turns slightly brownn

Step (3) add shrimp paste and stirring it for 2-3mins.

Step (4) add the coconut water (wait for 15 mins). Bring to simmer.

Step (5) add the chinese chili stirring constantly for 5-10mins.

Step (6) add the sitaw then stirring occasionally.

Step (7) add the coconut milk stir and wait till it boils.

Step (8) add the finger chili stirring constantly.

Step (9) for the last step add salt and seasoning for taste and wait for 3-5 mins. and your done... Ready to serve.
