Hot-Smoked Trout for Dinner!
After our friends dropped off some Rainbow Trout to bless us, our Little-Peppers gutted them and we soaked them in lemon juice overnight. Then, the following day, I decided to hot-smoked them over a fire. Here are some photos of the cooking process. Enjoy!
