Pumkin Leaf Organ Meat Stew Recipe: 100% Power Up.
Good morning dear friends of Steem Foods community. This beautiful Wednesday morning I prepared Pumkin Leaf Organ Meat Stew and I'll love to share the recipe with you. Pumpkin leaf is about the most common leaf vegetable in Nigeria. It's often the first leaf vegetable of choice in our traditional meals, soups, stews or any vegetable based recipe. Pumpkin leaves have a rich delicious taste and they are very rich in nutrients.
INGREDIENTS
2 cups finely chopped up pumpkin leaves
1kg organ meat (beef liver, heart and kidneys)
9 tomatoes, 1 large onion and 7 chilli peppers
2 tbs curry powder, 1 tbs dried thyme, 3 stock cubes and 75g tomatoes paste
1/2tbs salt and 100ml red palm oil
METHOD
STEP 1
I washed my organ meat and put in a suitable pot. I added 2 stock cubes, a pinch of salt, 1tbs thyme and 1tbs curry powder. I poured 1 cup of water and set on fire, meduim heat. I allowed it cook for 10minutes.
After 10minutes I turned off the heat and separated the meat from the stock. I set the meat aside.
STEP 2
I got a clean pot and set it on fire. I poured in my red palm oil and bleached for 3 minutes on meduim heat.
Next I blended my tomatoes, peppers and onions and added to the heated palm oil.
I stirred up while sizzling on fire.
I added my tomatoes paste.
I added my remaining curry powder, thyme, stock cubes and 1/2tbs salt.
I added my organ meat.
I added the meat stock from my boiled organ meat. I stirred up and put a lid and allowed to cook on low heat for 3minutes.
STEP 3
After 3 minutes I took off the pot cover and added my chopped up pumpkin leaves.
I allowed to cook for 2 minutes with the pot cover off then I turned off the heat.
I served in my stew bowl and took my food photograph.
Pumpkin leaf stew can be eaten with bread, cooked potatoes, dumplings and most preferably boiled white rice and cooked pasta. I do hope you enjoyed my Pumpkin Leaf Organ Meat Stew recipe. I'll be back to share more of my culinary experiences with you, bye for now, stay safe and have a blessed day.
