My Pot of Stewed Beef Barbeque Macaroni| The Recipe, 100% Power Up.
Good morning dear friends, it's been an awesome start to the new week considering we just celebrated Easter a few days back. I hope you are all doing good? This beautiful Tuesday morning I prepared for breakfast a pot of Stewed Beef Barbeque Macaroni. Macaroni and Spaghetti are the two most popular pasta types found in Nigeria. Macaroni is a regular in most Nigerian breakfast tables. I'll be sharing my recipe with you this morning, so let's go:
SERVING-4
INGREDIENTS
1 pack 600g macaroni
1 green bell pepper and 3 baby carrots finely chopped
400g organ meat barbeque
4 Scotch bonnet chilli peppers, 2 large tomatoes and 1 large onion finely chopped
100ml vegetable oil, 1tbs(sachet) curry powder and spices(as desired)
Salt(as desired)
METHOD
STEP 1
I placed my macaroni in a pot of briskly boiling water and cooked al dente for 3minutes.
I removed from the hot water and put in a sieve to drain.
STEP 2
I put a clean and dry pot on fire. I poured in 100ml vegetable oil and heated up.
When the oil was sufficiently hot I poured in my finely chopped tomatoes, chilli peppers and onions. I stirr-fried for two minutes.
STEP 3
I added my barbeque to the tomatoes, peppers and onions. I put a pot cover and allowed it to cook on low heat for 2 minutes.
I added my parboiled macaroni to my stewing veggies and barbeque.
I added my spices, 1 tbs curry powder and salt then I sprinkled a cooking spoon of water and stirred up. I put a pot cover and allowed it cook for 2 minutes.
STEP 4
After two minutes, I took off the pot cover and added my chopped carrots and green bell pepper.
I stirred up and replaced the pot cover.
I allowed it to steam on low heat for a final 2 minutes. I turned off the heat and removed the pot cover and it looked like this in my pot.
