BOILED PLANTAIN WITH VEGETABLE STEW
Ingredients
- Ripe plantain
- Roasted fish
- Pomo
- Pepper
- Onions
- Goat meat
- Egwu
- Seasoning
- Palm oil
- Eru, (local beans) optional
- Stock fish (optional)
Steps
Boil your goat meat, pomo and stock fish together with seasons and onions, when cooked you set aside, pour water
into a clean pot and boil.Pour your vegetables inside a blow with salt, when the water is boiled pour it inside the vegetables and allow it stay
for few mins ,after then sieve the hot water and clean with water, blend your pepper and onions together.Place a pot on the fire and pour in your palm oil allow it to stay few mins then pour in your blended pepper allow it
for some mins. and put the pomo, roasted fish, stock fish, meat and cover, allow it to cook for like 10mins,pour in
your washed egwu and your local beans, turn and cover for another 5mins,pour in your washed vegetables and mix it
together very well and allow it to cook on low heat for some time, bring it down your vegetables is ready.Wash your ripe plantain and cut it and put it inside pot with little salt pour water and place on fire allow it to cook for
20 to 25mins,remove from fire and remove the skin your ride plantain and vegetables is ready to eat.
