Today's featured dish is a marriage of two distinct components that surprisingly works well together. I'm talking about sweet and sour sauce and meatballs. Yes, you heard me right. Here in the Philippines, sweet and sour meatballs is a staple food in every local eatery. A perfectly fried and succulent pork meat ball paired with a sauce that's slightly tangy with a hint of sweetness makes a perfectly balanced dish. There are plenty of variations of meatball recipes and many cultures are proud of their meatball recipes. In celebration of this good food, let us all appreciate all kinds of meatballs out their from different cultures. I'm sure they're delicious! For now, let me be proud of my heritage by showing you how to make meatballs, Filipino style. So let's get started!

INGREDIENTS

No Flour No Egg Meatball

500 grams Ground Pork, 80% meat 20% fat
2 tablespoons Spring Onion, mince
4 tablespoons Carrots, grate
1 tablespoon Garlic, grate
1 teaspoon White Sugar
1/2 teaspoon Salt
1/4 teaspoon Ground Black Pepper

Sweet and Sour Sauce

3/4 cup of Water
1/2 cup White Vinegar
1 1/2 tablespoon Cornstarch
4 tablespoon Brown Sugar
1/4 teaspoon Salt
1/4 teaspoon Ground Black Pepper
5 tablespoons Banana Ketchup

Vegetables

1 small size Carrot, cut into florets
1 medium size Red Bell Pepper, cut into bias
2 small size Red Onion, cut into 4 wedges
2 cloves Garlic, grate
1 can Pineapple Tidbits, 137g

INSTRUCTIONS

Prepare the Pork Meatballs

  1. In a medium size bowl, combine all meatball ingredients using clean hands. Note: If you notice, we are not using flour and egg as binder. This is because we are using 80% lean meat 20% fat. The fat will be our binder.

  2. When the mixture is well combined, roll into small balls about the size of golf ball then let it rest for 10 minutes.

  3. Heat up oil on frying pan over medium heat. Once oil is hot, drop meatball one by one.

  4. Fry meatballs till golden brown-usually 8-10 minutes then set aside.

Prepare the Sweet and Sour Sauce

  1. Whisk together cornstarch, water, banana ketchup, brown sugar, salt and pepper in a small mixing bowl. Whisk until mixture becomes smooth then set aside.

Prepare the Vegetables

  1. How to make carrot florets - Make 5 slits around the carrot. Make sure slits are evenly spaced then slice thinly. Set aside.

  2. Deceived and remove ribs from the bell pepper then cut into bias.

  3. Cut red onion into 4 wedges then set aside.

  4. Grate 2 cloves garlic. Set aside.

Finish the Sweet and Sour Pork Meatballs with Pineapple

  1. On a pot with oil, saute vegetables for 1 minute. Half way through add garlic wait till full flavors of vegetables are develop.

  2. Then pour in sweet and sour sauce mixture, simmer and thicken for 5 minutes. Stir contineously.

  3. Add pork meatballs into the sauce then simmer and thicken for another 5 minutes.

  4. Next, add in pineapples cook for 2 minutes then plate and serve.
