THE BEST FILIPINO SIDE DISH | PICKLED PAPAYA RECIPE
Hello Everyone,
Today im going to show you how to make pickled papaya or what we call Atsara. Atsara is a popular side dish that is a perfect pairing for roasted and deep fried meat dishes. The procedure is very easy.
First, get yourself a papaya, not the ripe one but the green one. You want to use the unripe papaya because you want it crisp and fresh just like a pickle.
To start, make sure to peel the papaya. Slice it open with a knife then remove all the seeds.
Once thats done, start grating the papaya or make julliened cuts, whatever you prefer.
Second, slice some red capsicums, white onions, ginger, turnip and some carrots into strips.
Dump everything together into a colander then rinse it off with boiling water(no need to boil in a pot).
Third, transfer to another bowl then add white vinegar, white sugar then some salt and pepper. Mix everything.
Fourth, cover and store in an airtight container for 1 to 2 days. (I'm using cling wrap plus glass bowl cover)
I used to pay $1 for a 100 grams pickled papaya. Now im making my own and its really good. My wife loves it so are my kids.
Heres the ingredients by the way.
1 medium size green papaya
1 medium size carrots
1 medium size turnip or singkamas
2 medium size red capsicum
1 medium size white onion
1 thumb size ginger
350 milliters White Vinegar
4 tablespoons White Sugar, or adjust to your liking
Salt and Pepper to taste
