Hello food buddies. Have a good day to all..
I am thankful that God gives me another day to share with you all what I cooked or we ate for today. I am thanking God for all the blessings He gave that even in the pandemic we are facing we are still able to survive.

Now, I'll be preparing iron rich foods..

MORNING:

In the morning, my kids started their day with a bread with spread.

Then I decided to make a camote tops salad or sweet potato leaves salad. Sweet potato leaves is rich in iron that helps in curing anemia.

CAMOTE TOPS SALAD / SWEET POTATO LEAVES SALAD

This are what I needed:

✓camote tops/ sweet potato leaves
✓cucumber
✓minced tomatoes
✓minced onions
✓minced ginger
✓chili
✓calamasi
✓vinegar

THE PROCEDURE:

First, I boil a water then bring the sweet potato leaves to boil until it becomes soft.

Chopped the cucumber

Add the cucumber into the sweet potato leaves then the minced ginger, onions, tomatoes and chili then squeeze it with calamasi. Add the vinegar. Season it with salt. Mix it all well.

Ready to serve..

LUNCH:

I cooked bitter gourd omelette for lunch.
Bitter gourd is also rich with iron.

BITTER GOURD OMELETTE

INGREDIENTS:

✓bitter gourd
✓tomato
✓onion
✓garlic
✓eggs
✓chili

THE PROCEDURE:

The steps for cooking is so easy.
First, remove the bitter gourd seeds

Chopped into thin.

Then soak it with water and salt

Mince tomato, garlic and onions and the chili

On a hot pan, saute garlic, onion, tomato and chili.

Add the bitter gourd and mix well. Season it with salt.

Cook for about 10 minutes..

Remove it from the pan.
Beat the eggs and add the bitter gourd mixture

Then, fry the mixture..

DINNER:

I only cook corned beef in a can for dinner because my kids was invited for birthday and they ate there.
This is what I ate for dinner. I just pan fry it.
