My egusi ( melon) soup in a different style , by @ glopy. With a fantastic test.

INTRODUCTION.
In Nigeria,there are several ways egusi ( melon) soup can be cocked. But check out the way i prepare my that makes it to be fantastic and delicious

INGREDIENT

Melon (egusi)

Cow skin(kponmon)

Fish dried.

Periwinkles

Ice fish

Dry pepper

Sachet tomatoes

Maggi

Onion

Salt

Cra fish

Palm oil

Pumpkin leaf

I washed the cow skin and make sure that it was free from sand, i set it aside i then did the same with the dried river fish,fresh ice fish. I also washed and slice my pumpkin(ugu) and then also keep them aside .i also washed the onions and slice it down too. next i took the melon(egusi) and pour it into a bowl and add little water to it ,the periwinkle was already cut since it was with the shells so i just needed to wash it with salt which i did and then keep it aside.

So now i am ready to cook.
I pot my clean put on the fire and add a little water to it,the cow skin,the dry fish also onions ,maggi salt, pepper,was also added ,i then pot it on the fire to cook for a while. I then add the fresh fish ,the periwinkle was then added too. So i notice that there was no enough water on it,so i added some too and allow it to boil for some time .not too long i brought it down from the fire and sieve out the stock.

After that is done ,i now put a clean pot on the fire,when it got dried up, i added my palm oil and allow it to heat,but not to the extent of getting black oil .but a little after that i added salt and the dice onion also the sachet tomatoes was then added too. And i stirred for a while , then allow to boil some little more,then i added the melon ( egusi) to it and then allow to cook also for some time,after that i added the stock,the fish,the periwinkle,the cow skin(kponmon)and allow it cook properly,lastly i now put the pumpkin leaf. and not too long my egusi soup is ready as you can see this picture. Were i served it with eba.

In fact when i tested the soup it was so inviting and delicious
