My delicious French Quiche 🇫🇷with Red Onions, Balsamic Vinegar & Goat Cheese

I'm very much looking forward to sharing this recipe with you. My father taught it to me. It's a French Quiche with Red Onions, Balsamic Vinegar and Goat Cheese.

First of all you need the quiche dough. You simply need butter, flour, salt, egg and water. If you're extremely lazy, you can also use a ready-made dough. Depending on how much time you have on hand. Maybe during the lockdown, you can try to make one yourself. I will start from the inside.

Start with frying some speck. You don't need to use it if you're vegan or vegetarian but the original recipe uses small pieces of speck.

The next ingredient you need is Red Onions. At this point, it's worthwhile to buy good quality onions because they will give the taste to the entire dish. I like it when they are very strong. It will make a great combination with the balsamic vinegar later on.

Fry the speck and the onions at a low temperature. Slowly the onions will become transparent. Add some thyme, salt, and pepper to the mix.

At the same time, you can already put your dough into a quiche form. I like to put it into to oven already for some minutes before adding the rest. Pinch the dough a couple of times with a fork to loosen it up.

After that you can mix the goat cheese with an egg and a little bit of milk. Spice the mix as you like it. Some pepper, salt and nutmeg is sufficient because the mix is already very tasty.
Don't forget your onions in the pan. Add some balsamic vinegar at the very end. Your pan doesn't require much heat at this point. Just let the vinegar sink nicely into the onions. It will be delicious.

Put the speck and onion on the dough and cover it with the goat cheese mix. It should stay in the oven for 30min at 180°C. E voila!

My father always tells me to wait until the Quiche is cold. But to be honest with you... I like it hot!
With a side salad it's very delicious and a light meal - if you still have to do some work in the afternoon. It's a really quick recipe and not much can go wrong. Give it a try!
