Glorious day Food enthusiasts,

I'll be sharing with us how to prepare the very famous Nigerian tomatoe stew with fresh fish. I hope you all grasp the knowledge and remember to have fun while making yours.

Ingredients
Fresh Fish
Fresh tomato
Tin tomatoe
Fresh pepper
Onion
Crayfish
Seasoning
Oil (vegetable oil&Red oil)

So Let's start with Marinating the FISH!
Wash the fish, remove the gills in the head region, remove the blood and other excesses in between and wash thoroughly. Place inside your pot.

Slice some onions into it, some pepper, seasoning (I always recommend knorr) and salt to taste.
Of course we want the fish tasty!!

Here's what it looks like

Cover the pot and allow to simmner until tender enough for you.

Meanwhile, let's prepare our ingredients for stew proper.
I like my stew with a touch of freshness just like my Dad.
So slice the tomatoes and onions.

Also grind or pound the pepper and crayfish too

Let's check our Fish. It's all done because it doesn't take up to 10minutes for it to be ready unless you want a scattered fish. So turn off the heat.

Fish is ready

Like I stated it's all about the freshness today so no need to fry the fish, just turn it into a neat plate and set aside.

Moving on...
Turn on the heat,Take a neat pot, pour in the Vegetable oil

Pour in a little red oil(The twist)

Reduce the heat so you won't burn down the house...lol.

Throw in your onion and stir fry for less than 10secs, throw in grounded pepper, followed by crayfish and diced tomatoes. Put the heat back up.
Allow to summer till almost dry.

For the tin tomatoe, here's a twist. To avoid that sour tomato taste, pour out the tomato paste from the tin into a plate and add a little water and stir.

Couldn't get a clear picture but I hope you get the point.

When the fresh ingredients on fire are dry, Add the tomato paste and allow to fry, stirring occasionally to avoid burning. Do this until you've started noticing streaks of oil over it.

Add the fish stock(Water recovered when boiling the fish) to the pot. Do not add the fish yet. Stir and taste. Add seasoning and salt to taste.
Cover and boil for 3mins.
Add the fish and be careful when stirring. Boil
at low heat for another 3mins.

Our stew is Ready with streaks of oil over it. Serve with Rice, Yam, Spaghetti, beans, potato(Tastes amazing) etc..
