Learn with steem on how to process pap (Akamu or Ogi)

Hello steemians,

How was your day? Mine was good and less stressful. I am still trying to relax sine I got back to Lagos State.

Today, I will be teaching on how to process and make pap.

It sounds very easy right? Well, this is one of the easy but most difficult meal to prepare but I will share a trick that works for me.

Firstly, let's talk about how to process the pap.


HOW TO PROCESS PAP

The first thing to note is that there are different types of pap. The guinea, millet, yellow, and white corn when processed gives different results. But for the sake of this tutorial, we will be using the yellow corn which results in yellow pap.

The next thing to note is that not all type of yellow corn seen in the market is good or can be used or pap. The corn use in processing pap has to be dry corn.

The dry corn helps in making the pap very thick when prepared for consumption.


STEP ONE

Soak the corn in water with some ginger for 2 to 3 days max. After the first day, wash it out of the water and soak it another clean water. This process takes out the dirts that must have dissolved.

STEP TWO

On the 3rd day, wash it out and take it to an industrious grinding machine. The corn may or may not be well blended with a kitchen blender so it is advise to always use the industrious grinding machine. Grind the corn until it is very smooth.

STEP THREE

After grinding the corn, it is time to wash and sieve the charf. Get a chiffon cloth and dip bucket, cover the bucket with the cloth and tie a knot under the bucket such that the cloth becomes very tight on the bucket.

Get water filled in another bucket with a small cup by you side, put a plate in the smooth corn paste (it is not yet pap) and another bowl for putting the charf.

Gently scoup a plate of the corn paste unto the chiffon scarf and massage it while adding water little by little until it is clearly only the clear remaining on the scarf. Take out and the charf and repeat the process until you are done.

STEP FOUR

Allow the result derived from corn paste settle down, sieve the water out and then put the pap which is still very watery in a cotton bag for the excess water to drain out. You can put a heavy object on it to quicken the process.

When the water is completely out front the bag, you will be left with only the dried pap. Remove it from the bag, put it in plastic plates, you can put it in the fridge at this point or you add water such that it floats on it and that's all.

Your pap is ready for the next stage of preparation.

HOW TO PREPARE PAP

Mix the dry pap with a very little clean water to form a very thick paste.

Boil the water till100°C and then add it to the pap. Be very careful to keep turning the Pap while adding the water so that you will know when it is thick.

When turning the pap and your spoon becomes sticky and hard to move in the pap like it was before you started adding the hot water, then it is done.
