Culinary Contest | Potato Rice

Hello friends, I hope you're all doing well. I am Afifa Noor from Pakistan and today I'm participating in Culinary Сontest organised by @mariam.dariam.

I'm excited to share a simple and delicious recipe with you all that can be made in every household. The recipe I'm sharing is called Potato Rice, which is loved by both kids and adults alike. The best part is that it's quick and easy to make.

We will need the following ingredients:

  • 1 kg rice
  • Half kg potatoes
  • Half cup curd
  • 2 onions
  • 2 tomatoes
  • Ginger-garlic paste
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin seeds
  • 2 or 3 spoons red chili powder (adjust to taste)
  • 3 to 4 spoons salt (adjust to taste)
  • 1 spoon turmeric powder
  • 2 black cardamoms
  • 2 cinnamon sticks
  • Fresh green coriander
  • 3 to 4 green chilies

Cooking method:

First, I soaked the rice in water for 15 minutes before cooking. Then, I cut all the ingredients and cut the potatoes into fries shape, you can give it any shape you want. Then, I took a large clean pot and added about 1 cup of cooking oil and added onions and cooked until browned.

When the onions turned brown, I added the paste made from ginger, garlic, green chilies, and coriander, and mixed it well. Then, I cooked it for 2 minutes.

Then, I added potatoes, cumin seeds, cinnamon sticks, black cardamom, and salt to the pot. First, I mixed everything well for 1-2 minutes, stirring constantly.

Then, I added tomatoes, curd, red chili powder, turmeric, and mixed well. After that, I added half a cup of water and mixed again. Then, I cooked it on slow to medium heat until the potatoes were tender.

When the potatoes were cooked, I added 7 glasses of water to the pot. When the water started boiling, I added rice to it.

When the water started reducing and bubbles began to form add fresh some coriander leaves, I covered the pot and cooked on slow heat for 15 minutes, making sure the steam didn't escape.

After 15 minutes, our potato rice is ready to eat, very tasty and aromatic.

To make it even more delicious, I made a green chutney, which is very easy to make. I took some fresh coriander leaves, 1-2 green chilies, and made a paste.

Then, I mixed the paste into the curd and also added a little salt to it. I also added finely chopped onion and tomato to it. You can add whatever you like. Before adding the onion, I removed its skin and soaked it in water for a while. This removes the pungency of the onion, but its crunch and flavor remain, making the chutney even more flavorful.
