Healthy benefits of okro
Okro is also known as lady fingers, gumbo, ochro, or okra. It is a nutrient powerhouse, packed full of vitamins such as folate and vitamin c, and soluble and insoluble fiber.
It helps to reduce the risk of heart disease, keeps the intestinal tract healthy, and boosts the immune system, among other numerous benefits.
Ingredients:
•20-30pieces Fresh Okro ( cut up in thin rings by hand or with a food processor.)
•2 Large red bell peppers
•2 habanero or Jamaican hot pepper
•Precooked assorted meats
•3 cooking spoons red palm oil
•Beef: Best cut
•Shaki (Cow Tripe),shrimp (Optional)
•Fish: Iced Fish (Mackerel/Titus), •Dry Fish, Stock Fish
•1 handful crayfish
•Iru(optional)
•Salt (to taste)
•Onions (optional)
•2stock/boullion cubes
•Vegetable: Nigerian pumpkin leaves or spinach (fresh or frozen)(optional, I didn't use it in my cooking today)

Notes: Shaki, Meat, Dry Fish, Iced Fish (Mackerel/Titus) and Stock Fish must not all be used at the same time in preparing the okra soup recipe. If you can, by all means use all as they will add to the flavour. But if not, an okra soup prepared with only iced fish ((Mackerel/Titus) can equally taste good. So don't go and break the bank because of a pot of soup!
Onions is optional because while some people cannot bear the smell/taste of onions in okra soup, others are like "Okra soup without onions? No Way!"
So feel free to add and subtract ingredients but the minimum ingredients that make an okra soup are:
Okra (of course)
Palm Oil
Beef, Iced or Dry Fish
Crayfish
Pepper and Salt (to taste)
Vegetable
Seasoning
Instructions
If you are cooking with precooked meats:
Heat the palm oil for 2secs,pour crayfish and Iru stir for 1sec to avoid burning,pour the blended bell peppers, onions and habanero peppers,then add about 2cups of water or meat stock and bring to a boil.Add the bouillon powder and stir. Cook for about 5 mins.
Add the precooked meats,dry fish and shrimp and stir. Stir continuously to prevent burning. If the soup is too thick, add more water to lighten it to the consistency you want. Taste for seasoning and adjust accordingly.
When the soup has come to a full boil, lower heat, add in the chopped okro. Stir in till well combined. Turn off heat immediately.

If you are cooking everything from scratch:
Wash the stock fish and and assorted meat,beef put in the pot with water that covers the meats completely add bouillon powder,salt,onions and start cooking till soft but not mushy. Usually takes about 30mins -45mins on the stove
While cooking, wash okro and chop by hand or in a food processor and set aside.
Blend the onions, red bell peppers and habanero/Jamaican hot pepper and set aside.
In another pot pour palm oil,add the crayfish and blended bell peppers. Allow cook for another 10 mins Stir
When the meat and stock fish have cooked for about 40 mins,pour the broth and the meat,leave for another 5mins add the Okro,Stir the chopped okro, Turn off heat and move pot away from the hot burner.
Pour the soup out of the pot into a big bowl to stop the okro from cooking further and to ensure it retains its fresh green look.
Soup is ready enjoy as is or with any swallow of your choice YUMMY 😋 !!
