Food challenge contest week #63|| For kids and parents

It's week 63 food challenge and am here to present my delicious Egusi soup mixed with Ogbono. I also want to use this medium to greet all the kids and parents in this community including friends around the globe. Hope you all are doing great? For the sake of those Who doesn't know what Egusi is all about, I want to explain it to you and it's health benefits.

Egusi and it's health benefits.

Egusi as we normally call it in Igbo land is known as white seed melon. It is enriched with protein and commonly used in West Africa and Africans as a whole. Egusi seed contains natural oil which serves as antioxidants, Vitamin C and B-carotene. Apart from that, it supplies potassium, calcium and minerals to our body. It also regulates blood pressure. Being a plant food, it naturally cholesterol Free.

My preparations.

I bought grinded one, so no need to grind it. What I deed was to remove bones from the fish, washed it and put inside the pot. Add 2 cubes of Maggi and onions to it. Then, add salt and pepper, put water and place on top of the fire.

Within 30 minutes of boiling, I poured it in a clean plate. Put the pot back on the fire and add palm oil to it after drying the waters. Then, I put the small Ogbono and fried it with the oil. Then, I poured back the steamed fish inside the pot and cover it to boil for some minutes. Then, I added the Egusi to it and allow it to boil.

While it was boiling, I washed and chopped the uziza leaf's. Yeah!! Uziza was the vegetable I used to prepare the soup. After allowing the soup to boil for 20 minutes, I added the leafs to it and tasted it. Yummy 😜!!! I then added the leafs and cover it for 5 minutes. At this point, am done and my delicious soup is ready 👇.

Hope you love it??? It's really delicious. To prepare this soup, I used the following ingredients.

  • Egusi

  • Dry fish

  • Pepper

  • 2 seasoning cubes

  • Palm oil

  • Uziza leaf's

  • Ogbono

  • Salt

  • Water.

Do you know that Egusi contains lots of health benefits?? It takes care of the woond because it's highly rich in Vitamins B1 and B2 which helps to form and produce red blood cells. It's contains zink and phosphorus. Eat more of it today and enrich your health.

Your ingredients are just on point, steps are clear and easy to follow and the food looks delicious. I wish I came when it was prepared. Thanks for sharing
