Balancing work and study schedule has always been a task for me. But now, when I have finally figured out my routine, I tried to spare some free time for my own peace. Today, I got some free time and decided to bake. Yes, baking is always my first hobby and at the same time a therapy for me. I feel like I get so lost in baking that I completely forget about my daily life issues.
Once a wise man said:

“You don't have to love cooking to cook, but you have to do more than love baking to bake. You have to bake out of love.”

And I cant get over these words. One have to be passionate about baking to make the end result worthy. I baked a MANGO CAKE today. So without any further delay I'll share my baking day with you guys!

I woke up at 11 am today and according to my usual routine I scrolled through phone for some time then got out of bed, made my bed and went to freshen up. Then I made myself breakfast and then settled down in my room to study. I studied for a short while and winded it up quickly. I dedicated my day to baking today. I searched for some delicious cakes over instagram and found this yummy Mango cake recipe. I followed Zoha's recipe. Her account name is 'bakewithzoha' which you can easily search over instagram.
It was a long, tiring recipe but trust me, the end product was worth all the hard work.
First I made vanilla sponge with usual cake ingredients. It was a nice, soft, juicy sponge. It took 30 mins for a sponge to get ready (excluding the cooling time). Once the sponge cooled down, I cut it into two layers. Then I made Mango Syrup. It was so easy to make. For a mango syrup all you need is:
• 1/2 cup mango cubes
• 1/2 cup water
• 2 tbsp sugar

You are gonna take a sauce pan and pour al the above mentioned ingredients in it. Then cook it on a medium to low flame till it turns into a heavy syrup. Then cool it down, mash and strain the mango cubes in the same mixture. And your mango syrup is ready.
I spreded this whole mango syrup over the sponge with the help of brush.

Then I made mango puree which was added in between the two layers of sponge. I simply grinded a roughly cut mango in a grinder to make a mango puree. Then I cut small cubes of another mango and spreaded them both, mango puree and mango cubes, in between the two layers of sponge.

Then I placed the top layer onto the other one and brushed it with mango syrup. Here, all the inner work was done. Now only icing was left. I had already whipped 3 tbsp of heavy cream while the cake was in oven. I covered the whole cake with it. I first applied a thin layer of cream and put the cake in the fridge for 10 mins to let that first coat settle. Then again after 10 mins of chilling, I applied the second coat of cream to acheive that neat final look.

Then I sliced another mango into thin straight slices. You can see them in the above picture too. After slicing them I decorated these slices over the cake and gave it a rosey look. I hope I did justice to the roses :D
After decorating the slices, here is the final look of my Mango Cake.

It was not only good in looks, but super tasty in taste too. It taste more like mango trifle than a mango cake. My whole family loved it. The rich mango fillings in between the layers were just amazing. Here is the picture of a slice incase if you guys wanna see mango fillings.

I kind of look forward to your posts because you usually share some mouthwatering food/recipes. This is another wonderful recipe.
