If you want to make your own Sacher Torte at home, you will need the following ingredients:

  • 140 g of unsalted butter, softened
  • 110 g of icing sugar
  • 6 eggs, separated
  • 130 g of dark chocolate, melted
  • 110 g of plain flour, sifted
  • A pinch of salt
  • 150 g of apricot jam
  • 150 g of dark chocolate, chopped
  • 125 ml of whipping cream

To make the cake, follow these steps:

  1. Preheat the oven to 180°C and grease a 23 cm springform cake tin.
  2. In a large bowl, beat the butter and icing sugar until light and fluffy. Add the egg yolks, one at a time, beating well after each addition. Stir in the melted chocolate.
  3. In another bowl, whisk the egg whites and salt until stiff peaks form. Gently fold in the flour, a third at a time, until well combined.
  4. Spoon the batter into the prepared tin and smooth the top. Bake for 40 to 45 minutes, or until a skewer inserted in the center comes out clean. Let the cake cool completely in the tin on a wire rack.
  5. Cut the cake horizontally into two layers. Spread the apricot jam evenly over the bottom layer, then place the top layer over it. Refrigerate the cake for an hour.
