Scientific Review; the change from evolutionary diets to Western diets.

There is a key relationship in the essential fatty acids Omega 3 and Onega 6; and it is vitally important to maintain, if we want to stay healthy, the most suitable diet that we should eat because we have evolved from it, it is the paleo diet or the hunter-gatherer diet, and this has a ratio of 1 to 1; Even the classic diet of the Inuit people, commonly known as "Eskimos", has a ratio of 1 to 2, that is, twice as much Omega 3 as Omega 6, this is due to their high consumption of fatty fish.

But please pay attention to the information that I am going to give you, because it will make you understand many of the health problems of our current societies. In the Western diet this proportion is 20 to 1, that is, 20 times more Omega 6. than Omega 3. And this means that chronic inflammation in our bodies usually wins by a landslide, by scandal, by theft.

And this also surely explains the emergence and sustained growth of many diseases in our modern life. Diseases that historically, at a statistical level, had much less penetration in our populations, and currently there are many people we know who suffer from them, and the question then is: How did we get here?

The answer is very simple, why seed oils (soybean, corn, sunflower, etc.) are bad for the body and I am sure that one of those bottles is in your house right now.

Western populations are consuming large amounts of oils from processed seeds. And several of these oils are loaded with Omega 6 and contain virtually no Omega 3.

We also have to understand that the technologies to process this type of oil did not exist until about 100 years ago. And from that time until now, humans have not had enough time to genetically adapt to these very high amounts of Omega 6.

And that's the problem, even if you tell me "no, I practically don't consume oil, at home we don't eat fried foods", "we don't put oil on our food"... Be careful with that because it's a mistake, it's a trap .

The vast majority of the foods we consume daily are full of these oils; all processed or ultra-processed foods contain these types of vegetable oils as ingredients.
