Cutting Mustard leaves to make Saag.
کٹائی کے بعد اسے پنجابی لوگ براہ راست ساگ بنانے کے لیے استعمال کرتے ہیں، جب پودا ایک بازو کے سائز کا ہو جاتا ہے۔
یا سرسوں کے پھول کے بیجوں سے تیل نکالنے کے لیے استعمال کیا جاتا ہے، اس کے لیے سرسوں کی فصل معمول سے زیادہ دیر سے کاٹی جاتی ہے، اسے خشک کرنے کے لیے کاٹ کر تیل نکالنے کے لیے استعمال کیا جاتا ہے،
مجھے اپنے بچپن میں اپنے کزنز کے ساتھ سرسوں کے پھول جمع کرنا یاد ہے۔ لڑکیاں ان کے لیے پھولوں کے زیورات بنائیں گی جن میں: ہار، انگوٹھیاں اور بالیاں شامل ہیں۔ اس زمانے میں زندگی بہت سادہ اور پرامن تھی جب لوگ سادگی میں خوبصورتی اور خوشی تلاش کرتے تھے۔
ہم نے اپنے والد سے سرسن کا ساگ لانے کو کہا، وہ شام کو لے آئے، میری والدہ نے مجھ سے کہا، چلو اسے کاٹتے ہیں تاکہ کل صبح چولہے پر ڈالنے کے لیے تیار ہو۔ اسے کاٹنا ایک حقیقی کھیل ہے، اس کے لیے بہت محنت اور صبر اور توانائی کی ضرورت ہوتی ہے۔ میں نے اپنی ماں سے کہا کہ مجھے واقعی نیند اور سردی لگ رہی ہے، ہم کل صبح سویرے پوری توانائی کے ساتھ کریں گے۔ چنانچہ ہم نے ناشتہ کرنے کے فوراً بعد سرسوں اور پالک کے پتوں کو صاف کرنا شروع کر دیا، جب سب اپنے اپنے کام پر چلے گئے۔ ہم نے انہیں صاف کیا اور ایک دوسرے کے ساتھ یکساں طور پر رکھا۔
اگلا مرحلہ منی چاف کٹر کو دستی طور پر استعمال کرتے ہوئے اسے کاٹنا تھا (یہ میری سپر پاور کو جانچنا تھا)۔ مزید کسی بھی کارروائی سے پہلے، میں نے اپنی توانائی کی گولی ماری، میری صبح چائے۔

ذیل میں چاف کٹر ہے جو ہم نے اپنے پڑوسیوں سے ادھار لیا تھا۔ ایک زمانے میں ہمارا تھا، اب ہم سال میں ایک بار سرسوں کے پتے کاٹنے کے لیے دوسروں سے قرض لیتے ہیں۔
آپ کو ٹرے میں پتوں کو معتدل مقدار میں رکھنا ہوگا اور ہینڈل کو گول حرکت میں یکساں طور پر منتقل کرنا ہوگا، ورنہ پتے پھنس سکتے ہیں۔ میری ماں پتے رکھ رہی تھی اور میں فوراً مشین چلا رہا تھا۔
اپنے ٹیم ورک کی وجہ سے ہم نے انہیں کم وقت میں کاٹ دیا تھا۔ ساگ بنانا واقعی مشکل اور تھکا دینے والا کام ہے لیکن نتیجہ اس کے قابل ہے۔
اس طرح ہماری محنت نظر آتی ہے۔
کاٹنے کے بعد، میری والدہ نے کٹی ہوئی سرسوں کے پتوں کو اچھی طرح دھویا۔
اس کے بعد، اس نے چولہے پر ایک بڑا کینروون رکھا، اس میں پالک کے ساتھ سرسوں کا اضافہ کیا۔ ضرورت کے مطابق پانی بھی ملایا جاتا ہے۔ اس کے بعد، آپ کو سارا دن چولہے کے قریب صبر کی مشق کرنی ہوگی اور ھ تھوڑی دیر بعد ہلانا ہوگا۔
ہم نے 12 بجے چولہے پر ساگ ڈالا اور یہ تقریباً 9-9:30 بجے تیار ہو گیا۔ ہم نے کھانے کے لیے ایک اور کھانا بھی بنایا تھا کیونکہ ہم رات کو دیر سے نہیں کھاتے۔ آخر کار، ہم نے یہ ساگ اگلی صبح ناشتے میں کھایا۔ میری والدہ نے پراٹھا بنایا اور اسے ساگ اور دیسی گھی کے ساتھ اس پر ٹاپنگ کے طور پر پیش کی
ساگ کو مکئی کی روٹی یا گندم کی روٹی کے ساتھ اس کی انتہائی غذائیت کی وجہ سے یکساں طور پر پسند کیا جاتا ہے۔
** سرسوں میں معدنیات، ملٹی وٹامنز اور فائبر ہوتے ہیں۔ یہ نظام انہضام کے صحیح کام کرنے کے لیے انتہائی اہم ہیں، جس کی خرابی تمام بیماریوں کی جڑ ہے**

Mustard crop is very richly found in punjab. It is harvested during a cool and dry season mostly in October-November in pakistan. It ripes well when the temperature is 10-25C.
After harvesting it is used directly by Punjabi people to make saag, when the plant is grown to the size of an arm.
Or it is used to extract oil from the seeds of the mustard flower, for that mustard crop is harvested later than usuall, it is supposed to be cut down to dry it out for oil extraction, oil named Mustard Oil.
I remember collecting mustard flowers in my childhood with my cousins. Girls would make flower jewellery for them including: necklace, rings and earings. Life was very simple and peaceful back then when people used to find beauty and happiness in simplicity.
We asked our father to bring sarson ka saag, he brought it in the evening, my mother asked me, let's cut it down so that tomorrow mornings it'll be ready to put on the stove. Cutting it is a real game, it requires a lot of effort and patience and energy. I told my mother i feel really sleepy and cold, we'll do it early morning tomorrow with full energy.
So, we started cleaning the mustrad and spinach leaves immediately after having breakfast, when everyone went to their work. We cleaned them and placed them evenly with each other. Next step was to cut it down using a Mini chaff cutter manually(this was to test my superpower). Before any further proceedings, i had my energy shot, My morning Tea.
Below is the chaff cutter which we borrowed from our neighbours. Once we had ours, now we borrow from others, to cut mustard leaves once in a year

You have to place leaves in a moderate quantity in the tray and move the handle in a circular motion evenly, otherwise leaves might get stuck.
Making saag is really hard and tyring job but the outcome is worth it.
This is how our hard work looks like.
After cutting, my mother thoroughly washed the cutted mustard leaves.
Next, she put a large couldroun on the stove, added mustard along with spinach inside it. Water is also added as per need.
Next, you just have to practice patience all day long near the stove and stir after a while.
We put saag on stove at 12pm and it got ready at about 9-9:30pm. We had also made another food for eating because we don't eat late at night. Finally, we ate this saag next morning in the breakfast.
My mother made paratha and served it along with saag and Organic fat( Desi Ghee) as a topping on it.
Saag is equally liked along with Corn flatbread or Wheat bread due to its highly nutritious value.
Mustard contains minerals, multivitamins, and fibers. These are extremely important for proper functioning of digestive system, malfunctioning of which is the root cause of all the diseases
