Gnocchi alla Sorrentina!

I have been thinking about the Easter menu for days and I have had a tremendous desire for Sorrento-style gnocchi, with gnocchi made by me! And then, Thursday, the day of fateful shopping, with great effort, I bought everything I needed! - Ingredients for the gnocchi: - Potatoes 600 gr

  • Flour 200/250 gr

  • Salt to taste.

  • Operation n.1 boil the potatoes:

Crush the potatoes, put them whole without peeling them in the potato masher, as much as the peel remains on the bottom.
() Create a crater and add half flour and knead:

Add more flour. The moment it becomes a well-blended block, cut out a piece and roll it out in a twist. Cut into small pieces and roll up with the prongs of the fork.

***For the dressing: ** f - Cook a very normal sauce - Fiordilatte mozzarella (strictly from Campania) cut into cubes - Pecorino romano and / or parmesan cheese !
